I’ve tried @lecoupe_friedchicken tenders at various food fests and it was always the most memorable and best bite of the events.
Finally trying it at their restaurant with different options of fried chicken (sandwich and bone-in thigh) with elevated sides like corn ribs, puffed chicken skins and a compressed watermelon salad that shocked all of us.
It’s clear that chef @chefcraigwalker has some serious fine dining cooking skills based on the techniques used to make these dishes so flawlessly executed, balanced and delicious.
Each piece of chicken was the juiciest, most crispiest bite with a perfect combination of sweet and savory from a coating of chili honey that’s essential to the flavor.
As much as I love the chicken tenders, their bone-in thigh is the real show stopper - using a technique that frenches the meat off the bone allowing for a unique look and flavor profile that’s unmatched.
The fried chicken sandwich is incomparable to the rest. Huge, juicy boneless thigh with chili honey and a potato bun dressed with a fresh cabbage and kale slaw.
