great video, very helpful. i had a couple of fruits of black sapote and ate one wayy to early. as i don't like wasting organic fruit, i ate as much as i can without passing out lol, is was horrible eating an unripe sapote, now i will let them get to the stage you show and then enjoy

As long as it was picked mature green, it should ripen. One indicator is the weight... if it's heavy for its size, it should ripen.
