Love the video and the ideas. I'm only one person so I don't really need to extreme budget, but I love to see how cheap I can eat anyway. You have better luck with the biscuits if you add some acid , replace 1 tbsp of water with white vinegar because both baking soda and powder react with the acid in buttermilk even the small amount in milk. Never twist when cutting biscuits, it seals the edges and can hinder rising. If you place the biscuits touching they will use each other to rise higher.
@@treasureyourtime The vinegar would make up for the acid that is in the buttermilk, but not in the water. If you use buttermilk you don't need vinegar.

The nice thing about the leg quarters is you can save the bones and trimmings to make a homemade broth too! Another nice thing about many of the recipes you shared with us this week, is that they can easily and affordably be adapted and changed. You can use different seasoning and ingredients to account for preferences/dietary restrictions or to use up whatever you have on hand.

I love the idea of families adapting these recipes for their own tastes. Also I was kind of bummed that I didn't highlight the use of the shredded cheese in my recipes more. I could have topped those potatoes with it. I thought I would use it more at the end, but I just ran out of time.
Terrific recipes! You also might want to use some of the trimmed fat to render out for use in making your roux (it'll add flavor to the oil that you're using).

I use the quarters all the time. I roast 2 or 3, and the rest goes in the crock pot. Separate and shred the meat for casseroles, and the broth makes a large pot of soup with a bag of mixed vegetables and either noodles or dumplings.

I never catch the markdowns and was elated, and this gives me more ideas of how to use them for my family of four (adults). Michelle, I love how creative you get with making meals. We do a lot of shelf cooking towards the end of the month to empty out the freezer and the pantry. We always feel those are the best dishes when we just throw things together and use spices. Thank you for what you do 😊

You did a great job. You’d have enough from your crockpot chicken to make a chicken and rice soup for another dinner or lunch. Also with a little more rice a chicken fried rice for another lunch. Lots of possibilities with the extra chicken - chicken biscuit sandwiches? So many meals! People can feed their families but they actually need to cook and not use convenience foods. Snacks and drinks consume a lot of grocery budgets. Eat popcorn(popped yourself)for snacks and iced tea or water for drinks. That would save a lot of money for many families. A 12 pack of coke now cost around $7 - that same $7 can buy chicken to feed a family for a week. 100 teabags (house brand) is maybe $3 and would last a family two or three weeks for pitchers of iced tea for the whole family.
I agree - beverages and snacks eat up a lot of budgets. Better to drink water between meals and we used to have peanut butter on saltines or toast for after school snacks.
Mayonnaise makes a great sub for fat/buttermilk in biscuits. I love the big bags of chicken legs! I use one (frozen) leg in the instant pot with 3 cups water, poultry season, onion and garlic powders, and chicken bouillon. 25 minutes, natural release. Great soup plus shred half the chicken for other recipes. Customizable with rice, potatoes, veggies, etc., added after 1st natural release. Cook another 10 minutes or so with another natural release.
Yayyyy!!! I’m so glad you liked the idea! It was a lifesaver some weeks when my girls were little. It’s also great when you need to feed a ton of people and have a small budget. Two of our favorite ways to do it were 1) remove the skin and brown it with s & p, garlic, onion powder and paprika. Brown them in an oven proof skillet then add a teriyaki sauce, make some garlic butter rice and something green of your choice. Crazy cheap and easy but people go Gaga over it. 2) barbecue chicken and potato salad. Super cheap and easy but a big crowd pleaser.
We use a simple drop biscuit recipe ALL of the time. I can’t find the original recipe online (my husband found it like ten years ago when we were newly wed college kids), but I love it because it’s no fuss and dirt cheap. It’s 2 C. Flour, 3 tsp. Baking powder, 2 Tbsp. Sugar, 1 tsp. Salt, 1/3 C. Oil, and 2/3 C. Milk. Stir together until combined, plop onto a baking sheet and bake at 450 Fahrenheit for 12-15 minutes (my I oven usually cooks them in 13). I’ve found they’re fluffier when you don’t overwork them, and work just fine for biscuits and gravy, without the extra mess and steps to roll and cut them out.
@@pennynickels5216 I haven't tried freezing before baking, but we've frozen them after and they seemed just fine, as far as I can remember. I haven't tried it in a few years, since my family is big enough now where my kids eat most of them right away.
Yum! Great budget video. 😊 A thought for those who do not have a fat/oil in their pantry: boil down the skin and fat parts that were removed from the chicken, allow it to cool and skim the fat from the top. The water portion may also have a chicken flavor and can be set aside and used. When baking/broiling chicken in the oven, the sheet pan drippings can also be used as a fat/oil. You can use oil, bacon grease, or butter to make biscuits. Any fat will do. Use what you have. You can also make a buttermilk substitute for the biscuits by adding 1 tablespoon of vinegar to 1 cup of milk. Let rest for 5 minutes. Add to your recipe like normal.

I feed a family of 7 every day and your creativity inspires me every time. I have a child with several food allergies and I've learnt to adapt so many recipes. If someone is short on cooking oil or fat, save the fat you trim off the chicken and any skin you remove. You can render the fat out of that in a frying pan. Chicken skin chicharron is delicious.

Good job! From scratch takes extra time but it’s better for you and the flavor is off the charts! My family wants to go out to eat all the time but they’re always disappointed. Restaurants cannot compete with from-scratch cooking.

We have vegetarians and meat eaters. I brown up ground beef, cook pork shoulders in crockpot, cook chicken in crock pot and then portion and freeze. My meals are tacos (lentils for vegetarians, beef for non), chicken a la king over rice (use white sauce with margarine, flour, and plant milk for veg. For meat eater add some instant chicken bullion powder and the chicken from freezer first dethawed in microwave. Use a bag of frozen mixed vegetables.), Loaded baked potatoes (steamed broccoli, margarine, vegan baked beans - for non veg also add bacon and ground beef crumbles), homemade pizza, Chinese stir fry, etc.
It’s just a PSA to people who use the Walmart app. Please be aware that sometimes things in the story could change before they switch it on the app for example. it might say that it silverware is in required aisle, but they might have recently changed it or they can say that they do not have any more eggs left, but there still could be some on the shelf two things to remember if stock is low, they will consider it as sold out or if they move things around the location may not be available for a few days. Especially seasonal items in some location’s lawn and garden.
I'm so glad to see people doing these kinds of videos. There are so many people struggling right now. Food in my Walmart (upstate SC) is higher than yours. But this would still be budget friendly.
You can also wash your chicken with lime water or a little vinegar mixed in water, let it soak in a bowl for about 5-10minutes then rinse. Also you can scrape & remove the little yellow 'skin' on the tip of the drumstick.
Your chicken meals look fabulous! Incredible that you got all of that chicken and veggies for only 20 dollars. Chicken and potatoes are so easy to prepare and always a big hit with my family. I've never tried to make biscuits or scalloped potatoes - now I will. :)

Great video. I liked all the ideas. I personally would have collected all the bones to make a bone broth in the slow cooker. That way you can control the salt level and freeze it in different portion sizes for future use such as gravies or soups or stir fries.

I don't know if you have an Aldi's near you, but the one 30 minutes from my house has that bag for even cheaper. The last time I checked it was about $5. Also, I like evaporated milk for milk/cream substitute because its shelf stable and it has a really nice flavor in cooked dishes.

That chicken is a great find, at less than one dollar per pound. When I found out about it, I bought it and prepped it all the same day. I cooked it in batches in my instant pot. I fully cooked some and partially cooked the rest. I am only feeding myself, so I froze single portions. I labeled with the date and fully or partially cooked. It's so easy to pull out a portion to fix any chicken dish that I'm in the mood for. The bonus of making in the instant pot, I ended up with more than a quart of broth.

You did it again! A practical and creative tutorial. Your biscuits looked great and your meals looked appealing.In my area, biscuits made with oil are called pilot bread. I make vegan buttermilk by putting 1 qt of water 1/4 cup of oats, a pinch of salt and 2 Tablespoons of apple cider vinegar into a blender. I blend it until there isn't a trace of oats.Some recipes call for half a cup of oats which makes an even thicker product. I am with you....I bought a torch and cannot get the golden brown I want . I always get black char!

I also find if you ask the butcher at your grocery store when they put out the reduced meat each day you can get excellent deals usually half the price. I take it home and freeze it immediately. Thanks you gave me some excellent ideas.
Snowballing is what I call doing extreme budgeting. You have the first week high in carbs but will have leftover food you don’t have to buy next week and can Add a pack of frozen sausage if you can or markdown 😅meat. Remember to SAVE all your cooking oil for cooking. Taste is wonderful.

Hello 😁 Julie Pacheco is great! The can has water added though, and the frozen doesn't. I guess one would have to weigh out the actual product to be sure. I'm guessing they are probably equal. I'm partial to the frozen though, because it doesn't have all of the added salt that canned products do. But fresh is always my favorite. It's crazy how fresh can be cheaper than frozen. This video was incredibly helpful! Here in New Zealand, that same bag of chicken would be $26 ($15.74 USD) so we eat very little meat and are cutting back now on eggs, which have doubled in price. So recipes like these are truly helpful, thank you for all the excellent advise!!! ❤
Well done ! You did a fair job on the pricing. A bag of flour is crucial for budget meals, or any meal really. People just have to be willing to cook and do the work , as you did. A great tip (that I do when we get a Costco rotisserie chicken) is to use the bones, skin, any fat and left over meat to make stock in my crock pot. I put those things in, with water, seasonings and any veggies I have and let it cook on low over night. This makes a beautiful chicken stock. 🥰🌱🌿🌷💐☔💗✝

You could deglaze your baking pan ( don't use the foil ) and use that in your gravy . Brushing your biscuits with milk might help them brown although I see you haven't put that in your budget. One more meal could be the chicken skins you removed in your last meal wrap around a rice/ veg mixture seasoned . Fastened with toothpicks and bake until skin is crispy. Serve with gravy. I did get a few herb & seasoning for 10 cents each just got about tablespoon worth at Winco in the bulk section. I've also purchased I jalapeño before when I wanted a green pepper but didn't have enough . Flavor is more compact but adds color and intensity. Excellent video ,love these.

One of my favorite ways to use this chicken is to put the 3 quarters into the crockpot with potatoes and carrots and lots of spices. The broth is amazing, and then I debone the chicken before I serve it because my kids seem to eat it better, and less is wasted. It also makes great leftovers. Thank you for the other ideas. I love your channel.
Great video! You could even take some of the cooked chicken meat, shred it, season it with taco seasoning (or however you like it), and make stuffed baked potatoes for a meal. Bake the potatoes about an hour or until done…split them open, and top with seasoned chicken and some of your favorite toppings….which could be simple things like sour cream and shredded cheese. Yummy!

Our Super 1 Foods store had 10 lbs of chicken leg and thigh quarters for $2.70 before tax. Great deal and you can make so much food with it when you add other bargain grains, pasta, rice and beans.
If you want beautiful brown gravy, I recommend having gravy master in your pantry. It’s frugal, you only need a little bit to make a huge difference. My Mom always used it and people raved about her gravy. She had a diner in the 50’s and 60’s. Regarding the browning on the pot pie biscuits, I think the moisture of the gravy keeps them from browning really well. They did look beautiful!

Thanks for a great video again! Since I'm in Canada I went on the Walmart online grocery and put everything in my basket from this video just for comparison. For us it came up to $63.51. That's still only $15 per person for the week/ $3.18 per day. Very manageable even with the price difference here. I am learning so much from you....thank you.

I would scrape off the chicken fat/bits left on the foil for the roux, it would add great flavor for the gravy. Even an economical meal is a feast when served with love.

For those without access to an oven for baking the chicken--I've done a LOT with a $5 grocery store rotisserie chicken. I pull the meat off and put the bones in the slow cooker covered with water to make stock. Then the meat makes chicken salad sandwiches, chicken quesadillas, and a batch of chicken noodle soup and chicken chili or chicken curry with rice. The stock is used in the soup and chili or curry. I honestly can cook for three for a work week on one $5 chicken and maybe $25 in pantry and freezer ingredients. No oven required. And it's super easy to meal prep.

you just fixed a week of southern meals--and southerners are great at inexpensive food because most have been fairly poor for a very long time (the rural poor) especially outside of the large urban centers...these are staples at each meal (along with sausage biscuits and hash browns)...and this is largely what we eat (chicken, rice, potatoes, beans and biscuits)...just like CA and TX eat tacos and beans/rice...luv ya...dts/usa
Adding herbs/garlic powder/onion powder to biscuits was a common thing for my grandmother. For those pinched very tight the chicken fat can be rendered to use in cooking.
If you want your biscuits to brown a little better, & you want to keep them vegan whisk water with a little oil & brush the tops of your biscuits before you cook them & a second time half through cooking. And if you want to make buttermilk biscuits & all you have is plain milk add white vinegar to your milk and it will be a great substitute for buttermilk.
Yes, the baking soda and powder in the biscuits need an acidic ingredient, such as buttermilk, to react with to make them rise. You can even do add the vinegar to reconstituted dry milk. Also try using shortening or lard in place of the butter or oil.
I was born & raised in South GA. Homemade biscuits are a rite of passage for a real Southern girl. I remember the first few times I made homemade biscuits (I was in Jr high) and they were so hard they could be used as a hockey Puck (lol) 😂
What i do with flour if i am on a budged is easy chicken dumpling soup ❤ Also if you don't have egg for eggwash but mayve a little milk, try that it can also help, milk is what i use for danish pastry❤

Most Walmart Superstores sell 10lb bags of chicken leg quarters for between$6-7.00 and 5lb of chicken drumsticks for $4.79. Walmart prices for staples like flour, beans, whole grain bread and pasta, tomatoes, dairy, and frozen veggies are usually reasonably priced. (If you opt for delivery, beware. The bags of chicken and produce might {& sometimes do} show up underweight or short. Those particular items are better purchased at the store.)
If you make a lot of mashed potatoes they’re great to add some ingredients to like maybe onions/green onions, an egg and cheese if you have it to make potato pancakes. Delicious and my kids always loved them!
Love your ideas. Re chicken hindquarters, particularly from Walmart, I found that they included a significant back bone, so there wasn't a lot of usable meat. Made incredible stock from the bones though! I've started to wonder if boneless breasts, often at $2 a pound now, aren't a better buy with 100% usable protein.

for anything that you want that buttermilk taste (especially biscuits) use Saco Buttermilk Blend ($4.50). It lasts for ever in the fridge. Its a powder, just add water and mix in. I have used it in my homemade biscuits for years.

Buy them a few times a month (my dog eats raw, so some portion goes to her and some to us 😂) Has been a lot of price variation- $3.90 for a while, $7.99 for a while and everything in between! When it gets below $5 I usually get a few bags. Our two favorites are roasted drums (like your first meal - we call them “buffalo drums” - I refuse to buy wings because the price is crazy and chicken and dumplings! I will have to try some of your ideas because they looked great!
Love the video and the ideas. I'm only one person so I don't really need to extreme budget, but I love to see how cheap I can eat anyway. You have better luck with the biscuits if you add some acid , replace 1 tbsp of water with white vinegar because both baking soda and powder react with the acid in buttermilk even the small amount in milk. Never twist when cutting biscuits, it seals the edges and can hinder rising. If you place the biscuits touching they will use each other to rise higher.

Buttermilk wasn’t used in the recipe so would vinegar still be of benefit?

The nice thing about the leg quarters is you can save the bones and trimmings to make a homemade broth too! Another nice thing about many of the recipes you shared with us this week, is that they can easily and affordably be adapted and changed. You can use different seasoning and ingredients to account for preferences/dietary restrictions or to use up whatever you have on hand.

I love the idea of families adapting these recipes for their own tastes. Also I was kind of bummed that I didn't highlight the use of the shredded cheese in my recipes more. I could have topped those potatoes with it. I thought I would use it more at the end, but I just ran out of time.
Terrific recipes! You also might want to use some of the trimmed fat to render out for use in making your roux (it'll add flavor to the oil that you're using).

I use the quarters all the time. I roast 2 or 3, and the rest goes in the crock pot. Separate and shred the meat for casseroles, and the broth makes a large pot of soup with a bag of mixed vegetables and either noodles or dumplings.

You did a great job. You’d have enough from your crockpot chicken to make a chicken and rice soup for another dinner or lunch. Also with a little more rice a chicken fried rice for another lunch. Lots of possibilities with the extra chicken - chicken biscuit sandwiches? So many meals! People can feed their families but they actually need to cook and not use convenience foods. Snacks and drinks consume a lot of grocery budgets. Eat popcorn(popped yourself)for snacks and iced tea or water for drinks. That would save a lot of money for many families. A 12 pack of coke now cost around $7 - that same $7 can buy chicken to feed a family for a week. 100 teabags (house brand) is maybe $3 and would last a family two or three weeks for pitchers of iced tea for the whole family.
And bake your own treats! Oats are cheap and are nutrient dense. Bars, biscotti, cookies, crust, granola, oat scones, topping.

Mayonnaise makes a great sub for fat/buttermilk in biscuits. I love the big bags of chicken legs! I use one (frozen) leg in the instant pot with 3 cups water, poultry season, onion and garlic powders, and chicken bouillon. 25 minutes, natural release. Great soup plus shred half the chicken for other recipes. Customizable with rice, potatoes, veggies, etc., added after 1st natural release. Cook another 10 minutes or so with another natural release.

It was a lifesaver some weeks when my girls were little.
It’s also great when you need to feed a ton of people and have a small budget.
Two of our favorite ways to do it were 1) remove the skin and brown it with s & p, garlic, onion powder and paprika.
Brown them in an oven proof skillet then add a teriyaki sauce, make some garlic butter rice and something green of your choice. Crazy cheap and easy but people go Gaga over it.
2) barbecue chicken and potato salad. Super cheap and easy but a big crowd pleaser.
You can gently brown your flour first and then add your oil or butter for the gravy.
We use a simple drop biscuit recipe ALL of the time. I can’t find the original recipe online (my husband found it like ten years ago when we were newly wed college kids), but I love it because it’s no fuss and dirt cheap.
It’s 2 C. Flour, 3 tsp. Baking powder, 2 Tbsp. Sugar, 1 tsp. Salt, 1/3 C. Oil, and 2/3 C. Milk. Stir together until combined, plop onto a baking sheet and bake at 450 Fahrenheit for 12-15 minutes (my I oven usually cooks them in 13).
I’ve found they’re fluffier when you don’t overwork them, and work just fine for biscuits and gravy, without the extra mess and steps to roll and cut them out.

Great budget video. 😊 A thought for those who do not have a fat/oil in their pantry: boil down the skin and fat parts that were removed from the chicken, allow it to cool and skim the fat from the top. The water portion may also have a chicken flavor and can be set aside and used. When baking/broiling chicken in the oven, the sheet pan drippings can also be used as a fat/oil. Chicken fat is called schmaltz it is loved in Yiddish cooking. I used to save it all the time but somehow lost the habit.
You can use oil, bacon grease, or butter to make biscuits. Any fat will do. Use what you have.
You can also make a buttermilk substitute for the biscuits by adding 1 tablespoon of vinegar to 1 cup of milk. Let rest for 5 minutes. Add to your recipe like normal.

If someone is short on cooking oil or fat, save the fat you trim off the chicken and any skin you remove. You can render the fat out of that in a frying pan. Chicken skin chicharron is delicious.

We have vegetarians and meat eaters. I brown up ground beef, cook pork shoulders in crockpot, cook chicken in crock pot and then portion and freeze. My meals are tacos (lentils for vegetarians, beef for non), chicken a la king over rice (use white sauce with margarine, flour, and plant milk for veg. For meat eater add some instant chicken bullion powder and the chicken from freezer first dethawed in microwave. Use a bag of frozen mixed vegetables.), Loaded baked potatoes (steamed broccoli, margarine, vegan baked beans - for non veg also add bacon and ground beef crumbles), homemade pizza, Chinese stir fry, etc.

It’s just a PSA to people who use the Walmart app. Please be aware that sometimes things in the story could change before they switch it on the app for example. it might say that it silverware is in required aisle, but they might have recently changed it or they can say that they do not have any more eggs left, but there still could be some on the shelf two things to remember if stock is low, they will consider it as sold out or if they move things around the location may not be available for a few days. Especially seasonal items in some location’s lawn and garden.

Great video. I liked all the ideas. I personally would have collected all the bones to make a bone broth in the slow cooker. That way you can control the salt level and freeze it in different portion sizes for future use such as gravies or soups or stir fries.

That chicken is a great find, at less than one dollar per pound. When I found out about it, I bought it and prepped it all the same day. I cooked it in batches in my instant pot. I fully cooked some and partially cooked the rest. I am only feeding myself, so I froze single portions. I labeled with the date and fully or partially cooked. It's so easy to pull out a portion to fix any chicken dish that I'm in the mood for. The bonus of making in the instant pot, I ended up with more than a quart of broth.

You did it again! A practical and creative tutorial. Your biscuits looked great and your meals looked appealing.In my area, biscuits made with oil are called pilot bread. I make vegan buttermilk by putting 1 qt of water 1/4 cup of oats, a pinch of salt and 2 Tablespoons of apple cider vinegar into a blender. I blend it until there isn't a trace of oats.Some recipes call for half a cup of oats which makes an even thicker product.

Hello 😁 Julie Pacheco is great! The can has water added though, and the frozen doesn't. I guess one would have to weigh out the actual product to be sure. I'm guessing they are probably equal. I'm partial to the frozen though, because it doesn't have all of the added salt that canned products do. But fresh is always my favorite. It's crazy how fresh can be cheaper than frozen. Well done ! You did a fair job on the pricing. A bag of flour is crucial for budget meals, or any meal really. People just have to be willing to cook and do the work , as you did. A great tip (that I do when we get a Costco rotisserie chicken) is to use the bones, skin, any fat and left over meat to make stock in my crock pot. I put those things in, with water, seasonings and any veggies I have and let it cook on low over night. This makes a beautiful chicken stock. 🥰🌱🌿🌷💐☔💗✝

You could deglaze your baking pan ( don't use the foil ) and use that in your gravy . Brushing your biscuits with milk might help them brown although I see you haven't put that in your budget. One more meal could be the chicken skins you removed in your last meal wrap around a rice/ veg mixture seasoned . Fastened with toothpicks and bake until skin is crispy. Serve with gravy. I did get a few herb & seasoning for 10 cents each just got about tablespoon worth at Winco in the bulk section. I've also purchased I jalapeño before when I wanted a green pepper but didn't have enough . Flavor is more compact but adds color and intensity. Excellent video ,love these.

One of my favorite ways to use this chicken is to put the 3 quarters into the crockpot with potatoes and carrots and lots of spices. The broth is amazing, and then I debone the chicken before I serve it because my kids seem to eat it better, and less is wasted. It also makes great leftovers. Thank you for the other ideas. Great video! You could even take some of the cooked chicken meat, shred it, season it with taco seasoning (or however you like it), and make stuffed baked potatoes for a meal. Bake the potatoes about an hour or until done…split them open, and top with seasoned chicken and some of your favorite toppings….which could be simple things like sour cream and shredded cheese. Yummy!

Our Super 1 Foods store had 10 lbs of chicken leg and thigh quarters for $2.70 before tax. Great deal and you can make so much food with it when you add other bargain grains, pasta, rice and beans.

If you want beautiful brown gravy, I recommend having gravy master in your pantry. It’s frugal, you only need a little bit to make a huge difference.
My Mom always used it and people raved about her gravy. She had a diner in the 50’s and 60’s.
Regarding the browning on the pot pie biscuits, I think the moisture of the gravy keeps them from browning really well.

Thanks for a great video again! Since I'm in Canada I went on the Walmart online grocery and put everything in my basket from this video just for comparison. For us it came up to $63.51. That's still only $15 per person for the week/ $3.18 per day. Very manageable even with the price difference here. I am learning so much from you....thank you.

I would scrape off the chicken fat/bits left on the foil for the roux, it would add great flavor for the gravy. Even an economical meal is a feast when served with love.

For those without access to an oven for baking the chicken--I've done a LOT with a $5 grocery store rotisserie chicken. I pull the meat off and put the bones in the slow cooker covered with water to make stock. Then the meat makes chicken salad sandwiches, chicken quesadillas, and a batch of chicken noodle soup and chicken chili or chicken curry with rice. The stock is used in the soup and chili or curry. I honestly can cook for three for a work week on one $5 chicken and maybe $25 in pantry and freezer ingredients. No oven required. And it's super easy to meal prep.

you just fixed a week of southern meals--and southerners are great at inexpensive food because most have been fairly poor for a very long time (the rural poor) especially outside of the large urban centers...these are staples at each meal (along with sausage biscuits and hash browns)...and this is largely what we eat (chicken, rice, potatoes, beans and biscuits)...just like CA and TX eat tacos and beans/rice...luv ya...dts/usa

Adding herbs/garlic powder/onion powder to biscuits was a common thing for my grandmother. For those pinched very tight the chicken fat can be rendered to use in cooking.

If you want your biscuits to brown a little better, & you want to keep them vegan whisk water with a little oil & brush the tops of your biscuits before you cook them & a second time half through cooking.
And if you want to make buttermilk biscuits & all you have is plain milk add white vinegar to your milk and it will be a great substitute for buttermilk.
Yes, the baking soda and powder in the biscuits need an acidic ingredient, such as buttermilk, to react with to make them rise. You can even do add the vinegar to reconstituted dry milk. Also try using shortening or lard in place of the butter or oil.
I was born & raised in South GA. Homemade biscuits are a rite of passage for a real Southern girl. I remember the first few times I made homemade biscuits (I was in Jr high) and they were so hard they could be used as a hockey Puck (lol) 😂

Most Walmart Superstores sell 10lb bags of chicken leg quarters for between$6-7.00 and 5lb of chicken drumsticks for $4.79. Walmart prices for staples like flour, beans, whole grain bread and pasta, tomatoes, dairy, and frozen veggies are usually reasonably priced. (If you opt for delivery, beware. The bags of chicken and produce might {& sometimes do} show up underweight or short. Those particular items are better purchased at the store.)

Love your ideas. Re chicken hindquarters, particularly from Walmart, I found that they included a significant back bone, so there wasn't a lot of usable meat. Made incredible stock from the bones though!
I've started to wonder if boneless breasts, often at $2 a pound now, aren't a better buy with 100% usable protein.

for anything that you want that buttermilk taste (especially biscuits) use Saco Buttermilk Blend ($4.50). It lasts for ever in the fridge. Its a powder, just add water and mix in. I have used it in my homemade biscuits for years.

Has been a lot of price variation- $3.90 for a while, $7.99 for a while and everything in between! When it gets below $5 I usually get a few bags. Our two favorites are roasted drums (like your first meal - we call them “buffalo drums” - I refuse to buy wings because the price is crazy and chicken and dumplings! I will have to try some of your ideas because they looked great!
