I’m Filipino & in the Philippines, when there’s a big celebration, people typically serve lechon which is a whole roasted pig. Living in the US, it can be hard to do that so last Christmas, my dad roasted pork belly kinda like this and it was soooooo good! Thank you for sharing this recipe, I can’t wait to make it soon!

Hello Laura, I have been wanting to attempt this for some time now after having it at Bread & Meant in Vancouver. Your's looks great, i prepped it yesterday, and will cook tomorrow according to yours but in sandwich form with a salsa verde. Can not wait! Thank you for your enthusiasm.
I always make a porchetta when my Italian sister-in-law visits. Texas is an excellent place to find HUGE whole pork bellies. Usually I fill the center with a pork tenderloin and then wrap the belly around it. She loves it. She requests it actually. But, I think next time at home alone just feeding a few people, I am going to try this belly-only recipe. I'm feeding Brits most of the time and they love the 'crackling.' Cheers! ❤

I adore pork carnitas and classic roast pork and eastern NC pork barbecue. I am dying to try porchetta, as well as Philippine pork lechon, which looks quite similar but with different seasonings. I would love to learn of other pork dishes I don't know yet!

You should make Khichdi. It is comfort food made throughout Indian in different ways. It is the food people eat when they are feeling under the weather and it is absolutely amazing with that extra ghee on top. You will love it knowing how much you love food that is tasty and is ready in no time.
