This is a very old video now - our first time-lapses. There are more recent ones here on our TH-cam channel. To answer your question, it varies on species. Some, like the luminous fungi, take about 6 days from start to finish, but others can take weeks.
@ we can only do the Fungi time-lapses during the Fungi season so that limits the amount of time-lapse as we can get in one season but we think that it probably took us about six months to collect those time lapses. Editing them together only took a day.

Amazing to watch these time-lapses of mushroom growth - I am just wondering why, in certain cases shown at 1:34 and 1:43, 1:45, etc, certain mushrooms appear to 'take-off' while many little ones at their feet do not appear to grow at all?

It could be just that the larger ones had enough moisture around their feet to mature snd the others didn’t. Conditions fo need to be just right.
