That is proper commercial equipment and their execution they very well versed in what they're doing. The cook might be for the video, but I would say with that much prep they probably did this before opening and that prep was for a lunch service.

Japanese and Korean Restaurants are simply incredible! I mean how the hell can you take something as mundane, basic and simple as a Hot Dog, Hamburger or Sandwich and create PERFECTION?! And even more impressive is their commitment to their craft until they perfect the process just WOW! And yes I know there are other people who make great Burgers, Hot Dogs and Sandwiches but somehow these Guys just take it to a whole other level?

The blob of white was the egg. I highly doubt they sell only 5 burgers a day. It looked to me as if the food was made specifically to create this video. They made it for themselves to eat but for promo reasons. That's smart.
The one thing I can respect about this cooking compared to here in America is the hygiene. Clean kitchen and everyone uses gloves while handling or preparing the food.

My mouth is watering. This couple has a brilliance in combining flavors in burgers I never thought of. The avacado slices were generous. Here in California, USA, you might get either guacamole or a couple of slices, very thinly sliced. The toppings & sauces I could smell & imagine their taste. A burger with sides like you offer would be at least $25 dollars here , & I'd pay it!
