That is the right pasta, yes. What you should look for however, is that colour of pasta, but also "die-cut" pasta. As it is rougher in texture and the Carbonara sauce sticks to those noodles better. That's a Vincenzo trick. Yes, subscribe to Vicenzo's plate, he is a very good Chef and a master of real, authentic Italian dishes.
