As a 21 year veteran fireman from a university town PENN STATE {one of, if not the, top party schools in the USA}. . . I LOVE the Long Island Ice Tea. My favorite way to drink it? by the pitcher! My record was 3 pitchers. And I still walked home upright.
And my I say from the states, It's hard to tell which is more lovely, your eyes, hair, or that wonderful Irish accent.

I think most bars are watering down the drink when it’s ordered to prevent a drunken 🥴 patron and to boost sales. Some of the more upscale and corporate bars in my area are not allowed to serve the drink because management won’t permit them to serve it.

I was a bartender in a chain restaurant for 20 years. My favorite version of the classic Long Island Iced Tea is called a Tokyo Tea. Triple Sec, vodka, gin, white rum, and Midori, one shot each. Shake together. Add Sprite or 7-up to fill (We used a schooner). NO cola. Lime for garnish. Enjoy, but it really sneaks up on you. 😁

The Rusty Pelican, Miami, 1986: We sat at the bar, mid afternoon, pretty early in the day. My older friends ordered LI iced tea, so I ordered my first. Didn't taste any booze, so ordered my second. Then third. Then it was time to leave, and I stood up and promptly collapsed. They had to drag my 6'3" 200 lb. corpse by the ankles out to the car. There are some cool variations of the long island. My favorite is the bullfrog. White Rum, regular vodka, Tequila Blanco, Gin and Blue Curacao. Put all together with fresh lime juice. and top with red bull until it goes a nice green color. The lime juice takes the edge off the red bull and it's just tasty.

Long Island is my go-to drink. It is the real test of a good bar or bartender. Here in the US, bars take short cuts. They do not use simple syrup and lime , but instead use a generic sour mixer, so they mostly taste the same. The BEST one I ever drank had a secret ingredient that took me a long time to figure out - grapefruit juice. A splash or more grapefruit juice adds so much complexity to the taste.

Good to see you trying the L.I.I.T. It is one of my favourite drinks. The recipe here in Australia more commonly uses standard vodka rather than vanilla. Also the juice normally used is lemon rather than lime and is an equal portion to the boozy components. The one thing that confuses me is the inclusion of the Simple Syrup. I have had these at more than a dozen different establishments and none of them have included sugar syrup, the Cointreau and the Coke/cola seem to be enough sweetness. After five Long Islands in an evening I decided to “walk” from the bar/restaurant to Sydney Central Railway station, about a mile and a half through some of Sydney’s least friendly streets at 3am on a Saturday morning. When I woke up in the morning I was the proud owner of a very nice knife that I hadn’t seen before and can’t remember where it came from.

The recipe most of the really cheap bars here in the Midwest use a bottle of pre-mixed Triple Sec, Tequila, Vodka, Gin, and White Rum. They then mix that with an equal part of Sweet & Sour Mix (essentially just very very strong lemonade). They then top it off with a bit of Coke, just like you did.
The nicer bars make it like how you make it (but without vanilla in the vodka), but they still add about a shot of sweet and sour mix to dilute it. I think it really helps balance it out.

When you shake it next time... Don't worry about moving your arms around. Hold it over your shoulder and shake from the elbow vigorously until the entire shaker is "COLD". Then serve over the ice.
