      Normalmente não se pega no fundo, tem que se mexer sempre também

    You an try to use a organic tomato paste makes a big differance in taste as whole tomatoes arent used as much its more of straight meat ragu then tosed with taglatelle noodles with butter, ragu on top and toped with a parmigiano, i was taugbt this recipie by an italian chef i worked from treviso in northern italy where radichio de triviso is from. Also some cloves can be used and nutmeg. Also this style u can use venison its delicius served with a high quality truffle oil. Like your portuguese cooking shows you seem to be a trained chef im portuguese go but my sucks at cooking portuguese overcooks everthing to much doesnt pay attengion to her cooking,haha oh if u use the organic tomato paste method make sure you cook out the tomato paste ,it always needs go be cooked out dont just use it raw after sweating the mirpoix add the tomatomo paste in center and fry it in olive oil for like 2 minutes then mix it in with mirpoix and and cook it another minute not to burn it then add the meat wine reduce by half to ecaporate alcholol and water and milk cook until dkne and tenddr

      Use mirpoix cut brunois just like you use in a stew or you use mirpoix it helps sweeten the dish from the natural sugar from the carrots
