The chance to get dazed when hit from behind seems to be attacker's weapon skill vs defender's defense. And with every point of defense the defender has over the attacker's attack skill, they become a bit less likely to be dazed. If the defender's defense is 100 points above the attacker's weapon skill (in other words, the defender is 20 levels above the attacker when it comes to npc combat, because each level is +5 to these skills (players need to consider that their defense might not be at its current skillmax)), dazing does not happen. The opposite is probably also true: Higher attacker weapon skill than defender defence -> higher chance to become dazed. Good to keep in mind when riding around, because dazing dismounts you. I'm not sure if immunity to crits also confers immunity to being dazed from behind, hard to test in vanilla, since crit immunity without having 100 pts of defense above the attacker is difficult to establish when you don't have talents that lower your chance to become crit.
