Note that he is using Key Limes. Key Limes have a lot less pith (the white part of the peel). You can use Persian limes, but you want discard the pith prior to blending. Zest them and peel the pith away from the fruit. Add the zest and the meat of the fruit (no pith) to the blender and follow the recipe from there. I have never seen this made with coconut water, but will be giving it a try.

I believe the name Limonada Suiça comes from the fact that back in the day Brazil imported most of its sweetened condensed milk from Switzerland through Nestle, and the can had a typical pastoral scene with a Swiss milkmaid on the wrapper.
I make a version of this by zesting the skin first, then peel and blend the limes. I really dislike bitter things, so this cuts down on that flavor massively.
