1) the first Bak Chok Mee stall is my favorite stall! Why u never ask for Mee Pok noodles is the best for me, I always ask for the extra vinegars , it give u more kick to it. 2) Kway Chap , I cant see any further on this ~ because u eating kway Chap without the Kway Chap chilli! U should pour some of those chilli into the soup and u have chilli soup with flat rice noodle, that is what I do! Haha, and you can dip in those meat into the chilli sauce ! 3) not all Westerner like to eat offal ( testicle of a animal except foie gras) you are the first ! Bravo !
To the four places that you have visited, all I've ever been to is Ng ah sio bak kut teh. I've only eaten once at the place you visited, lately when in Singapore I eat Ng ah sio bak kut teh at Marina Bay Sands foodcourd .. Seeing you eat at its original place brings so much memory.. first to go to that restaurant me and my friends got lost, the taxi driver got the wrong address.. but it paid off with a very delicious taste, no regrets .. If you go to singapore again try Balestier Bak Kut Teh, I think the taste is also delicious .. 😊

Bak Kut Teh - in Hokkien dialect just means rib tea. Pork ribs slow-cooked in tea, star anise, cloves, cinnamon sticks, sugar, black soya sauce & a few peppercorns.
Hi Max, bak Kut teh pretty much translates to pork herbal tea. There are lots of herbs and spices that is infused into the soup which gives that amazing flavour. So nice to see you enjoying one of my favourite dishes. All the best!
Ok, Kuay chap is mostly Teochew origins. The braising gives the history away. Teochews brought their cuisine out from Swatow, China to Thailand, Malaysia and Singapore. In fact, in Bangkok, you will find a lot of Teochew food and some older folks who speaks the dialect. The white pepper bak kut teh is also a Teochew variant (IIRC) vs the herbal/dark soy sauce version.
Porky goodies! The best kind of goodies! The fog lens can be fought. Here in Missouri we leave our deer rifles out overnight before the morning hunt because if we store them overnight inside, our optics fog and that means less fresh venison sausage over the winter in our pantries. Humidity, aircon, and lenses do not blend well. If you have an option to leave your optics outside of aircon in a humid climate, always do. Lovely video

The char kuay teow I recommended to you, Outram fried kuay teow mee is just opposite the Tai Wah pork noodle you went to at Hong Lim market food centre.

At Chinatown complex there is this Tian Tian porridge at second floor. My favouite for breakfast. Order the dough stick and put in your porridge

haha thank you! Yeah, the sauce got missed as I found out afterwards. That stall is nice because the queue is not bad, almost none 8:30-9:00

Did you try Klang bak kut teh in Malaysia? It's originally from there and SG version is way different, its more like pepper soup.
