I haven't got a grill on my oven but it gave me an idea ... after I've baked, while the oven is still warm, I'm going to put the basket in there for a bit to dry out, then brush as you say. Baked my first sourdough loaf today, and it was pretty darn good :) Plenty of room for improvement but it tasted great and that smell when I took it out of the oven - Wow!! Can't wait to begin the process again in a few days :)
I've been giving my baskets a little blast with a blow dryer after I brush the flour out. I got an inexpensive little travel one to keep in the kitchen.
They also make Driers for Watercolor Painting that have a very focused Air Drive. Look around in the Art Supply World to see the many different styles.

Had a basket for Christmas, hours spent on making the loaf and it STUCK in the basket. As I pulled it out it lost its shape and collapsed. It still tastes good but it a bit more like a flat loaf, it might have to be converted into a bread pudding! An internet search has brought me to your wonderful TH-cam channel. Already watched 3 videos, i have a bit of catching up to do. Thanks for your advice hopefully more success next time.
Hi Jack keep up the good work. Love the videos. Re cleaning bannetons I also use the oven dry/stiff brush method but still sometimes get a persistent hard residue on the ridges of the basket. I find a gentle rub with a clean dry steel wool pot scrubber works wonders.

Early on I read something about leaving the flour to prevent sticking next time .. and perhaps if you bake every day that's brilliant .. .but after a week or two, I found small bugs making a home in my banneton -- yuck! Since then, I've been using an old toothbrush to clean it out after drying.
That's exactly what I did!! Thank goodness, I tapped it on the sink then brushed it a bit to make sure I had all the little flakes of flour out 💝💝 I didn't use the cloth cover since you don't 😂😂😂. See you next Thursday 💝💝
I live in Florida, which is always humid. I shake my baskets out and dry them on top of the oven as you do, but I almost never brush them out. I keep them in a covered plastic bin. Never had any problems with mold.

The best thing to clean out bowels is Eddington's Jasper Carrot flexible scrubbing brush. You can buy them on Amazon for about a fiver. I promise you due you the way it flexes it will need the best tool you've ever used for this job.

Hi Jack, hope you and your family are managing well. I did follow your recommendations on this cleaning method, BUT, apparently I had dough stuck to the banneton, not just wet flour. Wasn’t a good bread day. Anyway, now there is hard crusted dough that my brushes aren’t removing. Should I soak them to clean and then let them dry? Thanks. Love your helpful videos. I make two loaves every week.
I had this problem too. You've probably solved it by now, but for any else with the same problem: I'm not sure soaking the baskets would be the best plan; I'd worry about it damaging the basket and you'll still have a sticky mess to deal with. What I found worked well was to scrape off the worst of the dough with something pointy like a fork, before having at it with a brush.
nice. I tend to just shake off the excess flour and leave whatever has caked in to stay, that way theres less of a chance of the next bake sticking. Although during the summer its pretty humid in Beirut, i tend to give them a good ol scrub otherwise i'll attract some unnecessary bugs.

Great tip about covering focaccia as it cools to keep it moist. Going to try it next time I make some.

I should clarify that while the toothbrush is rather old -- it was only used for this purpose! :) The bugs however were definitely gross!
Re the weevils (not uncommon)- a great way to kill them is to freeze the basket.

I use rice flour in my Banneton basket. A friend suggested flour because it won't mold.😮

Using a Banneton with or without cloth insert. Is it personal choice or a specific reason to use or not to use?

Are you sprinkling flour into your banaton before you put the dough in? If you do that, the dough shouldn't stick.
I can't find a scrub brush like that - I want one with the smaller scrubbie on the back.
