Description :
Ingredients & Process :
A. 4 - 6 hard-boiled eggs, peeled and pircked
1.5 Tbsp of Cashew, Melonseed & Groundnut Paste (Soaked & Pasted with Green Chili 4, Ginger 1",Cardamom 2, Cloves 4-5, Cinnamon 1/2",Black Pepper, Mace, Black Cardamom )
B. Curd 1/2 Cup + Lil Salt + 1 tsp all purpose flour+ 1 tbsp milk) : Mix well
C: Temper Vegetable Oil + 2 tsp Ghee with Bay leaf , Clove, Cardamom, 1/2" Cinnamon and Mace.
D.Add 3 Sliced Onions till translucent .
E. Add Sugar 1/2 tsp
F.Cover and cook for 4 mins in low flame.
G.Add Cumin powder 1 tsp & add 1 tsp Coriander Powder.
H.Add Cashew Paste
I. Add Curd Mix
J.Cook till oil separates
K.Add the Eggs
L.Add Green Chili (Slitted)
M.Cover for 3-4 mins in low flame
N. Add water & bring it to boil for 5 mins
O. Add Gondhoraj Lime Juice 2 tbsp : Pour the Gondhoraj lime juice over the eggs in the pan. Sprinkle half of the lime zest on top.
Gently toss the eggs in the lime juice and spices, ensuring they are well coated.
P. Add Gondhoraj Lime zest,
Q.Cover the pan and let the eggs cook for a few more minutes on low heat, allowing the flavors to meld.
Garnish the Egg Gondhoraj with the remaining lime zest and fresh coriander leaves.
Serve hot with roti, paratha, or steamed Basmati rice.
