Probably they want to test it out how much bhp and torque this bike produce. Btw the guy who is testing doesn't know the bike has quickshifter and it doesn't need to off that throttle, if you look carefully between the gear shift pedal and and footrest that is a red colour thing connected to the gears rod

Honda quote 160bhp standard ( very modest compared to the Fireblade ) and 212 with Sports Kit fitted ( slightly up on a Stock Fireblade ).

All I learned is that 4th to 5th gear seams pretty close ratio-wise.
Of course everyone knows that the RCV123VS's quickshifter isn't energized unless the front wheel is turning. We all know that don't we.
