Rhythm Section first, then Brass, Then Winds? Does it always come together cleanly? I'm afraid I might take my jazz band through the process and students may loose track of dynamic placement? Could an engineer easily make the necessary adjustments?

There is no set method. I was a studio musician in L.A. for many Yearns. The artists generally made a decision for each session, often it was totally “live” with the total orchestra. Then it could be the rhythm section and artist on tape played for the other instruments on earphones, or just the rhythm section. As a brass player I don’t remember ever having individual sections (brass, woodwinds, strings, etc. recording separately. There’s great separation so that any group, including the artist, could be re-recorded if necessary.
