I grew up on funche y guinganbo con bacalao guisado en Puerto Rico. I lived in Santa Cruz USVI y allá le llaman Funguie and okra with Salt fish is done exactly the same way. We do it my ex mother in law was from St Croix and she made it for me all the time. I haven't tried to make it but I will tomorrow

same here.. unfortunately she took the recipe to the grave.. nobody in my family knows how she made it, but i do remember one thing, my grandma never used big chunks of onions and peppers, she would dice them so they would almost disappear when it was cooked. and it was soo yummy!

how do you keep the cilantro from getting black and keeping it fresh?
When you buy it cut the ends and put it in a cup of water and place it in the fridge. It should last you a while.

Yes. When it's served with beans it's called funche clavoteao.

La version dulce es simplemente harina de maiz or crema de harina de maiz. Maizena es algo diferente, es facula de maiz.
