This dish reminds me of when I was much younger, selling cable TV in LA. One evening I knocked on a door, was invited inside and met with a heavenly smell of Veal Parmigiana. Got a sale and a plate of some excellent Parmigiana!
I love chicken parm and Italian food. Growing up daddy's rule no pasta or cooked tomatoes. I was 21 before I learned spaghetti didn't come in a can. We only ate out if traveling from base to new duty station. Daddy died at 92 only eating pasta once at 17 yrs old Parris Island boot camp. I am my mama 99 yrs old caregiver aka cook. She will enjoy this.
Oh my goodness, your cookbook arrived today. I must admit I was a bit teary eyed while reading the dedication. Happy Birthday! My husband LOVES chix parm. Early in our relationship, he said if he found a woman who could make a great lasagna, he'd marry her. The next week I made lasagna. He really liked it. We have been together for 20 years...married for 10 of those 20. It probably would have been sooner if I made this chicken parmesan 😂😅😊. Actually we just never got around to it, we knew that we would always be together for life❤❤❤. He definitely deserves this recipe, and I absolutely will be making this for him. Thank you for sharing. Happy birthday to you, Tom! Growing up on Long Island, chicken parmesan was a household staple for most of my neighborhood. Every pizza parlor has a chicken parmesan hero on the menu, too. I will sometimes pound the chicken without slicing them thin, bread and fry it, let cool, cut a horizontal "pocket," then stuff the pocket with a mixture of spinach, parmesan, and mozzarella before proceeding to make the chicken parmesan with the stuffed chicken. A bit more work but a show stopper.

I love this dish. I am Italian, my grandmother would leave heaven and hit me with a wooden spoon if I put sugar in the sauce. She used to wrap raisins in cheese cloth and drop that in her sauce...that was her sweetner. You did an amazing job. Gonna make this for my man Friday, have a great salad, and a bottle of pinot noir.

Great cook! My wife has a problem with acidity in tomatoes. I began putting sugar in sauces because I heard it reduces acid. Been doing it for years now. She responds well to it. Also, just want to say that a little sugar sweetens the sauce because sometimes I taste it to be a little on the sour side. Good call, Tom.

Just made this recipe tonight for supper. I used the last of our garden fresh tomatoes for the marinara sauce. I also used Italian bread crumbs instead of the panko. The meal turned out so good. I put the chicken over linguine. Hubby said it was a keeper. Thank you for the recipe. Love you channel, Laury

It looks great. I love chicken parm. I would add sweet dried Basil instead of the sprigs, it is so much better, but that's just me. I'm not a fan of panko, but I do love the seasoned bread crumbs. I deep fry my chicken when I do this.

Tom & Melissa - I made this for supper tonight & we absolutely love it. This is the best Chicken Parmesan we have ever tasted. it is great & I put the 2 teaspoons of sugar into the sauce as well. I had 2 dinner rolls left Perfect for the two of us. I had California Vegetable Mix in the freezer & that is what we had ! Perfect Meal by Tom & Melissa!
The very thinly sliced meat (chicken, in this case), we call scallopini. In a good butcher shop, they would be marked as such. Glad you salvaged some perfect pieces for your recipe. I’m sure your chicken parm is much better than Carnival or any place.

I have making chicken parm for years as it is my favorite dish. And like Melissa, whenever I go to an Italian restaurant chicken parm is my go to pick as I love it so. I add a pinch of baking soda to my spaghetti sauce to cut the acid. Doesn’t change the flavor to me but I have found it successful in cutting acidity. I’ve used a little sugar, too, in the past as well. My spin on making this recipe is that I also bake my chicken in some sauce after browning the bread crumb covered chicken. Last 5 minutes in oven I put the cheese over and let melt. I have also purchased pre-breaded chicken breasts and/or tenders and cooked in crockpot. No need to brown, just put in crockpot, cover with jar sauce and cook 3-4 hours. Add the cheese and let melt. I have found that depending on the size of breasts or tenders, it is done in 2 and a half hours. A little shortcut for busier days. My mouth was watering while you were making this. Now I want some! I haven’t made this in years I used to make it for my dad and husband they both loved it. Especially after canning homemade spaghetti sauce from all of the Roma to tomatoes in the garden. Everything was from scratch is but the best is veal. Parmesan is amazing. Chicken Parmesan is good also but veal Parmesan is the best. I would make that with a big salad and homemade garlic bread

It looks great. I love chicken parm. I would add sweet dried Basil instead of the sprigs, it is so much better, but that's just me. I'm not a fan of panko, but I do love the seasoned bread crumbs. I deep fry my chicken when I do this.

Tom & Melissa - I made this for supper tonight & we absolutely love it. This is the best Chicken Parmesan we have ever tasted. it is great & I put the 2 teaspoons of sugar into the sauce as well. I had 2 dinner rolls left Perfect for the two of us. I had California Vegetable Mix in the freezer & that is what we had ! Perfect Meal by Tom & Melissa!

The very thinly sliced meat (chicken, in this case), we call scallopini. In a good butcher shop, they would be marked as such. Glad you salvaged some perfect pieces for your recipe.

I have making chicken parm for years as it is my favorite dish. And like Melissa, whenever I go to an Italian restaurant chicken parm is my go to pick as I love it so. I add a pinch of baking soda to my spaghetti sauce to cut the acid. Doesn’t change the flavor to me but I have found it successful in cutting acidity. I’ve used a little sugar, too, in the past as well. My spin on making this recipe is that I also bake my chicken in some sauce after browning the bread crumb covered chicken. Last 5 minutes in oven I put the cheese over and let melt. I have also purchased pre-breaded chicken breasts and/or tenders and cooked in crockpot. No need to brown, just put in crockpot, cover with jar sauce and cook 3-4 hours. Add the cheese and let melt. I have found that depending on the size of breasts or tenders, it is done in 2 and a half hours. A little shortcut for busier days. My mouth was watering while you were making this. Now I want some! I used to make it for my dad and husband they both loved it. Especially after canning homemade spaghetti sauce from all of the Roma to tomatoes in the garden. Everything was from scratch is but the best is veal. Parmesan is amazing. Chicken Parmesan is good also but veal Parmesan is the best. I would make that with a big salad and homemade garlic bread

Oh, a very blessed birthday, Tom! I love all your videos and can't wait to try this one. I LOVE chicken parm, too. I really appreciate the way you keep reminding us that it's ok sometimes to take shortcuts when cooking...and the fact you mentioned "not having the energy to cook" since I'm disabled and it is an issue for me. I would love seeing a few bits of you guys on cruise ships when you vacation; that would be cool. Blessings to you both from a Christian sister and friend in Michigan.
