  • For this episode we partnered with The Elan Collective which is a company out of Newton, MA which makes great high quality bar kits and rocks glass sets. I've been using some of the tools and I really love them. We also have a coupon code for you guys for a free set of ice ball molds with the purchase of any bar tool sets, use the following link:
    theelancollect...
    We all love the idea of using molds to make Ice Spheres, but practically, when we freeze them the ice comes out cloudy. No matter how hard we try we just can't seem to get the ice spheres to freeze clear. In this video we teach you a technique to get around this problem so you can freeze perfectly clear Spheres of Ice to drop inside your glass of whiskey or next cocktail creation.
    Don't forget to check out our other sponsor Stagger Lee Goods which makes awesome hand sewn and custom Kitchen and Bar Aprons, here's a link to their site:

    The premade spheres that fit perfectly in the glass are wonderful and all, but if they fit perfectly in the glass then this goes against your prior video lessons. You taught me that the ice must initially be too big for the glass. You must put it in, then take it out, chip at it, and repeat until it barely fits. Then you build your drink and realize that its still way too big and there's no room to stir without making a mess, then proceed to stir and make said mess. This is Leandro's method. Kidding of course, thanks again

    I have been making clear ice for years now using the Cocktail Chemistry method. I have had great results using straight tap water. But if you have public water that has a lot of contaminates I guess you can boil it. The most important thing I learned from you is the tempering of the ice. It makes cutting cubes a lot easier. But I sure wish there was a ice company close by that made clear ice. Thanks

      I would also say, can’t remember if I do in the video, that heating up the water dispels some of the gasses and can give you great results, I usually don’t do that though and don’t have problems

      using a water purifier also helps in getting some of the impurities out, but his method is just ingenious.

    I had wondered how those worked. Thanks!
    For a sphere...this may be the best way, yet a lot of moving parts. For simplicity, I prefer the cooler cube method - few moving parts and lots of ice.

      Guys so for the sake of argument why do you think I’d post this video if this was a failed experiment? Don’t you think I’d just say that the ice wasn’t clear and the ice making system wasn’t good? This wasn’t a sponsored post, I owe the company nothing. Why would I hide it? My mistake was I took the ice right out of the fridge and it was frosted as ice does directly out of a freezer I didn’t show you guys an Image of it after it was tempered. But the ice was clear...

      Barfly, im definitely not trying to knock your hustle but as a consumer looking for unbiased reviews of items I may potentially sink my hard earned money into, if I see inconsistent information its my duty to other consumers to call it out. At 5:24 I can clearly see cloudy ice, it appears that half is clear and half is not. In every other video out there once the ice is made it is showcased so the viewer can see it. In your video the ice is obscured and shuffled to the side. I get you're trying to promote a product but your viewers will appreciate it more if you give the good and the bad. I didn't mean to come off as a hater, just giving my opinion. Keep up the videos I like a lot of your stuff.
      P.S. The difference between cloudy and clear ice, definitely a first world problem...lol

    I think clear ice is a cool concept for the occasional home cocktail for one or two people, but unless you live in a meat market with a 1000 sq ft freezer hosting a party or more drinks it’s just not feasible. I’ve worked in numerous bars and restaurants here, not really high class or anything, but I was wondering how many establishments actually do this? Looking at economics I can’t believe it’s really that many... the prep time, volume and freezer space makes this all cons financially... unless your selling $40 Old Fashioned’s lol!

    • @TheEducatedBarfly
      @TheEducatedBarfly  4 ปีที่แล้ว +3

      Most bars buy their ice from ice companies. Even the ones that cut their own

      The Educated Barfly thanks for the response, and that makes perfect sense, don’t know why that didn’t cross my mind, might have to see if there are any companies around me here in Texas that sell ice that way. And many praises for your awesome content, I went to bartending school in ‘01 but it was kind of disappointing on the creative side and led to a few years of working at shot bars and clubs in Austin making the same 3 cocktails and shots everyday and I burned out and left the career path, a few months back I stumbled across your channel and it let me see the art in cocktail creation in a whole new way which I wish the school would have, my interest has caught back on fire and I’m making and experimenting at home now like crazy and thinking of giving it another shot if I could find a true cocktail establishment near me to learn and really express the art of it.. everything out here is beer joints or shot bars lol! Keep up the great work man!

    Do you have to use something insulated, like the cup in your example?

    • @TheEducatedBarfly
      @TheEducatedBarfly  5 ปีที่แล้ว +2

      Yes, that helps to slow the freezing process in the vessel you want your minerals and gasses to escape to. You want that water to be the last to freeze.

  • @CarlosSempereChen

    Just to add some science - boiling removes dissolved gases, but not minerals. But gases will come back in as the water cools, especially if you disturb it. That increases the surface area, and pouring it much more so. You're actually better off pouring while it's near boiling though, because it won't absorb as much air while hot. Then cap it somehow.
    Minerals won't do much on their own. They can act as a seed for dissolved gases to start forming bubbles on, but it's still the air causing the problem. And you can't get rid of them. If it were easy, water districts would do it to reduce all the hardness complaints. Though we'd never take them all out - pure water pulls calcium and manganese out of your bones! Speaking of which, if you buy pure, reverse osmosis'd water, use it quickly because it doesn't have anything in it that inhibits germ growth. Freezing (to freezer temperatures) doesn't kill much.
