  • Pork Belly can be one of the most tender and flavorful pieces of meat you will ever smoke. Using the Pit Barrel Cooker in this video, I smoke up some thick pieces of Pork Belly after a good seasoning rub and use the finished product in a delicious meal.

      I bet that's great. I make a honey sriracha sauce for wings. I use equal amounts of honey and sriracha, and add garlic powder, soy sauce and lime juice. It's amazing.

    Oh man that looks good. The way you always talk about loving soft easy over bacon, that had to be top shelf stuff. I agree about doing it on the PBC direct pit style for the super flavor. What a nice lookin Sammy.

    Very nice - i had a piece of porkbelly almost exactly as big as yours. Decided on making porchetta for the first time, and i realized that it was very har tying it together when its that "small" - turned out relly nice, but next time i will follow your lead here :)

    Another great vid Ry! If I were to try this on my Oklahoma Joe or Weber Kettle, about what temp should the smoking chamber be? The normal 225 to 250? Thanks again for all your vids...one of my fav channels to watch.

      Thanks! The PBC generally runs between 275-300, so in that range would be good. But lower will work fine, it just may take a bit longer :)

    I’ve been wanting to do some pork belly, but the issue is always “what to do” with it?! Thanks so much for the great idea.
    We just did a 9lb pork butt on my Pit Boss for my sons birthday. I used the competition blend pellets. I use a rub I made myself, and it came out amazing. Cooked it to 203°, and it pulled perfectly.

      It was 1 hour in the foil pan on the PBC after 2 hours on the grate :)

    Would it have been beneficial to flip the pork belly after the first hour so both sides were getting the direct heat? I don't want to burn the bottom side. Didn't look like yours did. Going to do these this weekend.

      With the distance from the coals to the cooking grate in the PBC that usually won't happen. Wouldn't hurt anything to give them a flip, though :)

    Didn't you have any issues when pork belly dripping a lot of oil to the charcoal and that becomes black smoke and even flame all over? I had that issue with gas grills so wondering if barrel smoker would be better for cooking pork belly

      No, the PBC is designed for that. The drips just create smoke, not flame, since the lid and venting system restricts airflow to prevent excessive flareups. Ribs drip A LOT of grease and the PBC is a rib machine :)
