When I make birria I put cotton gloves on with nitrile gloves over them and do everything by hand. Makes the world of difference and is so much faster then using tongs and or spatulas.
I’m sure you know but the Karu can be hooked up to propane as well. I have one and prefer to cook with the wood but the propane is way easier and faster.
