Used to work at a Wetherspoons, the kitchen would close at 11pm, and generally staff would start slowly cleaning down around 10pm for an early finish, but every Tuesday at 10:55pm, this couple would come in, order 2 starters (which they changed every week), and then x2 14oz Angus Steaks with peppercorn sauce, both medium well, and those come with fries, peas, tomato and mushroom. So just making sure we used every piece of equipment we had already cleaned down, for that one order... I don't miss working there 🤣
Silverware and dishes at a place named something like Bed Robster, is soaked and pressured washed. Then they are put through a high temperature washer that also blast the dishes. Silverware and dishes are then wiped down but if any have food left over they are sent back through. The busser and server are responsible for the final silverware served at the table. Nobody wants to see a dirty dish leave the kitchen.
I used to have a thing about metal utensils. I had to have one, and there was this restaurant called, San Francisco Bread Company. I would go and always order their potato soup. And I always had to specify that I needed a meta spoon. I was pretty young at this time but it lasted years. Eventually I think they changed management and their service got terrible, and the food wasn’t as good.
