This is a lovely dish, I’ve prepared it three times now, using only 1/4 c olive oil, and one 10 oz bag fresh spinach. I’m preparing it again tonight, and serving myself, with rack of lamb. :-)

It was in Kalymnos that I first saw a Greek Orthodox calendar, which indicates “vegetarian” days & “fish” days ...etc. It was fascinating because until I saw the calendar, I thought that Lent was the only time of the year with dietary restrictions.

I hate it when some people make it and it turns out a bit slushy & sloppy, but yours appears to have the perfect finish. The rice looks fluffy and perfect which is the way I like it. Well done! Good news in my town, I have now found a supplier who sell spinach in big bags at affordable prices, we have a Greek restaurant opening up in town and a new ethic food shop has opened up, selling Middle Eastern foods, and sells some ingredients used in Greek cooking. Can you replace the fresh spinach with frozen spinach and account for the extra water? Fresh spinach in clamshells and bags always go bad quickly for me.

I'm Pakistani by birth and my mom makes the spinach very similarly minus dill and red onion. And she cooks it with butter and does add little milk with cumin. The yummiest recipe. I am wondering if this is a Greek dish, how did it get to all the way Pakistan. We were colonized (aka oppressed) by the British but am curious how it got transmitted. Regardless, I love it and cook it often, too.

I don't know if it had any effect. But Alexander the Great reached Pakistan during his expedition/conquest. Maybe the dish has similar origins
