I always thought the reason the Torah started with the creation account was because the people had been living among the other nations for many years. It's obvious they "knew' the Egyptian gods and they no doubt heard all the different versions of Canaanite and Egypt creation myths. While it's clear they knew they were of Abraham, Issac and Jacob it's not clear they had an accurate record of what they needed to know about the time up to Abraham as they were coming out of Egypt. So in context it could be "No ! No! forget about what you heard. In Beginning Elohim created the Heavens and the Earth". Critics like to point out that there are indeed older creation myths, but those were wrong in general and had lots of errors.
