Dude, there's a lot of issues with this video... First of all, I can't take the opinion of someone who eats their steak medium well. If you're trying to "dry brine" your stewks to get the flavor in it, it should be on a wire rack. Alton Brown did an episode on it. Lastly, your pellet issue is because you leave it outside, and apparently uncovered. It even states in the manual not to do that, that's why the pellets jammed. The moisture from the air and possibly rain that got inside.

This guy is a lazy pig. If he would clean it out he wouldn't have this problem. There is a reason there is a clean out door for the pellets so you can dump what you don't use. I put mine in a 5 gallon bucket with a lid and clean it after every use and never had a problem.

151 degrees! I pull mine at around 126-128 and if they get over 132 I feel I have failed myself and my wife and kids! Hahaha.
Brisket I will pull between 200 and 205 and then open rest down to 170 and then rest in a cooler for the next hour or two (or more) down to 145-ish, for serving temps.
This smoker looks like it was not maintained at all, and you are correct - my dad has had a pit boss for well over a year and cooks on it every weekend, even leaves it out in his pergola (covered) and has never once had a problem with major issues or temperature fluctuations. However, he cleans it after every use. Everyone in my family has at least 2 or 3 grills and we all have heavy duty offset stick burners as well as pellet grills and some even have some weird Brazilian open flame, built in pits and other whole pig rotisserie as well and all of the pits get cleaned after they are used and cool down. It's part of normal maintenance on any tool that is used - 'clean after use'

You know, I bought a camp Chef pellet smoker when it first came out, never had a problem with it. Last year I upgraded to a newer Camp Chef pellet smoker/grill And it works great! The old one is still working fine too. The problem with yours isn't the smoker, It's the person operating it! If you learn how to operate your smoker right, take care of it, maintain it, use it correctly, then you should be happy with food that the pellet smoker puts out.

Darin you are absolutely spot on , nothing personal Tony but it is painfully apparent you do not take care of your vertical smoker and it is a vertical pellet smoker not a pellet grill. I have owned my pellet grill for 8 years and never had the issue Tony is talking about. I love my grill and so does my family for what it does for the meat I cook on it . The vertical smoker in your video looks 20 years old because its not taken care of. If Tony cleans it up and maintains it he will be very happy with it .

"How To NOT use and maintain a Pellet Smoker".
1: Leave it out, full of pellets, in a "wet weather" challenge envioroment.
2: Don't read and follow the Manufacturers instructions.
3: Don't clean or maintain your equipment.
4: When you have issues, make sure you continue to abuse the grill/smoker the exact same way, because it's not the users fault.
5: Complain when the equipment fails due to user abuse.
6: Tell others not to buy ANY type of pellet grill/smoker because you have no clue how to use them.
7: Keep your equipment in such disrepair and neglect, even to the point of being a health hazard, then blame the grill.
8: Live in Texas, and cook your beef to shoe leather. (Well, guess it's better than the diseases that settled on it.)

My cabinet smoker is in my garage and the Traeger stays outside, fully covered from top to bottom, on a raised platform that is waterproofed and has drainage. Tony, Pros and Cons: I have the exact Pit Boss you show in this video. I read the directions and watched as many videos as I could find prior to purchase. In life, I have learned that there is no such thing as fire and forget. Even with a stick grill/smoker you have to tend the thing. You also must maintain any piece of equipment if you expect it to work. I will say this upfront about the Pit Boss Smoker, the controls are in a poor spot and they do not work well at all. I chose to replace mine with an aftermarket PID controller. The retro was effortless and now I can control the temp to within 5 degrees. I am religious about putting water in the pan to help regulate the heat as well. Yet I will tell you that this is still not a startup and forget smoker. None of them are. As for your assertion that they are junk based on the pellets clogging up I must say that the manufacturer specifically states that this will occur if you leave them in the smoker and leave it out in the weather. Therefore after each use, I drain all the pellets into a sealable plastic bucket with an airtight lid. Lastly, the amount of dust is directly related to the quality of the pellets. I have noted that the Pit Boss pellets tend to have more dust than Quisenart and other higher quality pellets. My recommendation to you for cleaning the glass is to use Apple Cider Vinegar and water just after cooking while the glass is still hot. The residue comes off easily. As for the grates and water pan, I use spray-on olive oil and have an easy time cleaning these parts with hot soapy water after each use. I hope these revelations are of help to you and other viewers.

I have the exact same one as well. It works amazing. I leave my pellets in it year round but it is on a covered porch. I love this thing. I always use the water pan as well as it helps maintain temp and helps to keep the meat moist instead of having to spray it periodically. I want to upgrade my controller as well. If you don't mind me asking what controller and where did you get it?

Just a small correction, you have a pellet SMOKER, not a pellet grill.
That machine is 100% for smoking meats.
Pellet smokers do create smoke rings when used properly.

  • @mikesmicroshop4385
    @mikesmicroshop4385 2 ปีที่แล้ว +2

A smoke ring does not mean anything! The smoke ring is caused by nitrates in the smoke, if you want a smoke ring just spritz your meat with some Celery Juice powder mixed with water and you will get a smoke ring! It is not any indication of smoke flavor at all it is totally dependent on the type of wood you use as different species produce greater or lesser amounts of nitrates as they burn. The Nitrate penetration has NOTHING to do with smoke flavor penetration! Once your piece of meat reaches a temperature of 170F the smoke ring will no longer gain any depth as the Myoglobin in the meat will not react with the nitrates in the smoke any longer, however, the smoke will continue to flavor the meat as long as it is in the smoker! To get more smoke flavor on any smoker, not just a pellet smoker you have to go LOW and SLOW. The smoke flavor is a factor of time exposed to the smoke. Also Smoke is a Particle, it does not penetrate meat to any great extent, it is primarily a surface effect. If you trim off the outer 1/8 to 1/4 inch of a piece of meat you will remove 95% of any smoke flavor you added by smoking it.

  • @youreright7534

All indications from other videos are that vertical smokers are not the best choice for steaks. Every other vertical smoker video that I've seen uses these for low and slow applications. I do steaks on my pellet grill and they come out great. It has a flame broil feature that allows me to cook them fast and hot. I get steak house quality from my pellet grill. I do ribs low and slow and they come out just as good as my old offset smoker. I think that the particular application is key here.

I use my Pit Boss 850 pro V2 pellet grill and have no issues with the temp but that’s not a vertical one. But in your case it’s just taking care of your equipment I clean mine after every use and I smoke all the time.
I get smoke rings all the time on my pellet smoker maybe it’s just that model. But my PitBoss will leave a nice thick amazing ring.
I also like my camp chef smoke vault 24 that is propane. It’s an upright smoker and I use wood chunks for smoke. It is also amazing and produces great smoke flavor it does require more attention to temp as it doesn’t have a computer system to keep it in range. I have therma pro temp tracking to monitor it.
For Xmas I made 18 steaks on my PitBoss and reverse seared them on my blackstone with garlic and butter. On my smoke vault I did 6 tritip like a brisket. Everything turned out amazing.

How dare a piece of equipment not properly maintain itself, and not jump out of the way when I am careless and dumping grease everywhere!!!....Looks like it was left in the rain, and rarely cleaned. .....
And if it wasn't left in the rain, then it's an issue of a very humid environment that is the culprit, and you clearly shouldn't leave pellets in the hopper when not in use. Thats one of the purposes of the release door. Its not a stick burner.
"Pellet smokers do not leave smoke rings...."
Thats all you need to know about his level of competence. I get decent smoke rings from my Broil King. My offset does it better of course, but we are talking about a slight tradeoff for convenience.

How to solve pellet clogging issues:
Step 1: Get a sifter to get the dust and small bits out.
Step 2: Buy a grill cover for your smoker.
Step 3: Use the sifter with every new pour of pellets and use the cover when you are done.
Doing these should prevent you from having to deal with clogging for years, if ever.

Ok, thanks for sharing your experience with tour pitboss but if you buy a lower end pellet smoker, and don't maintain and store it properly this video shows what happens. The best part about any smoker (offset, gravity fed, lump charcoal or pellet poopers) is the experimental trial and error. Try better quality pellets, maintain your smoker which includes cleaning out your smoker once cooled after use and then post a video like this. PROPER storage of your pellet smoker is also crucial. The smoker is a tool and like any type of tool, if you don't maintain it you are destined to have these kinds of issues. I have an offest and a traeger and once I learned how to use it, people couldn't tell the difference between what was smoked/cooked on what. Last point was your claim on "no smoke ring with pellet poopers".... you are 100% wrong. YOU don't see a smoke ring because of how YOU use your pitboss and take care of it.

EXACTLY. I have that exact same Pit Boss pellet smoker and it does amazing. I have guys who only use offset smokers and such ask how I get such a good smoke ring. I tell them I have a pellet smoker and they're in shock. I only use Pit Boss pellets. I follow the book as to cleaning schedules and such. It sets outside year round but on a covered porch with no issues to the pellets or smoker. I leave them in year round as well. He doesn't prepare his meat properly. He doesn't cook it properly. So many things wrong with this video it's not even funny.

Pit Boss is the bottom end of the pellet grills. You get what you pay for. I bought a Rec Tec for twice the price and got a 10 time better grill. I dont use my Weber charcoal kettle anymore. The Rec Tec temperature stays exactly where you set and is has never clogged.

NO "GRILL" setting. You're just trying to save face, but don't realize you're using one of the most popular pellet smokers from Pit Boss, meaning many people that see your video have the same smoker.

8:00 in. You buy a pellet smoker, do not follow any of the recommendations for use, obviously NEVER clean it like is recommended to do, have ABSOLUTELY NO IDEA how to use a pellet smoker, and then complain that it's a waste of money, and worthless, and all the problems (that the recommendations are there to prevent... RTFM). Mine sits out on an uncovered patio all the time. I've NEVER had the issues you've described in the video so far. Of course, I clean the burn pot after every cook (or before the next cook), wipe my ambient temp sensor with a 3M green pad regularly, and USE A WATER PROOF COVER!!!!! Let's continue.

They are specifically smokers. If you want to use a pellet smoker as a grill, buy a pellet grill. NOT A VERTICAL SMOKER. And NEVER listen to this dude. He has absolutely no idea what he's doing. He has the right tools for just about every kind of cook he wants to do... he just doesn't know which one to use for what. And PLEASE never ever let your choice of smoker/grill get into such a state of disrepair and abuse as this dude's.

You gotta learn you pellet grill! 1. Never store pellets in the grill. Always drain the pellets and burn the remaining pellets out after cooking! Also, you didn't need to disassemble the grill to unjam the auger. Just drain the pellets and use a broom handle to unjam while the auger is turning. Furthermore, you need a pellet grill for long smokes, like ribs, brisket etc. YOUR VIDEO IS ALL THE WAY WRONG!!!!!

I never clean my glass in the door. Not that it matters. I just have to open the door to see the food. Just like on a standard offset barrel type. Only take a minute or so to get back up to temp inside. So... I don't really need the glass. The chamber is so full of smoke anyway, you can't see anything.

I usually don't criticize , however this is clearly a case of user error. You can't leave pellets in the smoker for any more than a day or two, and that is only if you are using it fairly often. Dude, please take the time to read the manual, pellet smokers can get you reasonably close to stick burner flavor if you learn how to use the machine correctly and experiment with different pellets because they are not all the same both in flavor and quality.

  • @HiHoSilverAway76

Holy hell cover your steaks in the fridge and take care of your pellet smoker. It’s common sense to take pellets out of your hopper if you live in a high humidity area or an area with lots of rain. If you have a covered porch you can get away with keeping them in, but you should regularly clean your pellet smoker to via the owners manual. Also all that rust in there surely isn’t healthy to ingest.
