Spice-Mix for Marination
1-inch Ginger (peeled & chopped)
6-7 Garlic Cloves (peeled)
2 tbsp Watermelon Seeds
6-8 Green Cardamom Seeds
1/4 cup Processed Cheese
2 tsp Garam Masala Powder
1/2 tsp Sugar
1 cup Curd
2 tbsp Roasted Gram Flour
2 tbsp Fresh Cream
Marinating the Chicken
500 gms Chicken Thigh (cut into cubes)
Salt (as required)
1/4 cup Fresh Cream
Coal for (smokiness)
1/2 tsp Oil
Cooking the Chicken
2 tbsp Oil
1 tsp Chilli Flakes
For Garnish
Cabbage
Chilli Flakes
Coriander Leaves

What is processed cheese? Cheddar? Mozarella? Cottage Paneer? Dhakai Paneer? What?

Great recipe. Varum. However as an Englishman, you are not the only one who does this, but marinating is the process and marinade is what you do it with 👍It doesn't detract from the recipe but I am pedantic and OCD. Just me😉

I wonder if the chicken is even cooked enough. Seems same as that in the marinade. Curd usually never allows these meats to get cooked, had bad experience.

White watermelon seeds?
I have never seen them used in a recipe let alone seen them for sale. What flavor or texture do they provide?
Not watermelon but musk melon. They are called magaz (ma ga zz) You can easily find them in any Indian grocery store. They are used as a thickener in a recipe as well to make the sauce creamier.
