Helli julie. 😂 you got me laughing when you said Italian yeast is not the same as Nigerian yeast. Yeast is yeast dear. Proof the yeast first by adding 1tble spoon of yeast, 1tblspn is granulated sugar and 1/4 cup of Lukewarm water into a cup, stir it around, and let it sit for 10 mins. If the mixture foams up after 10 mins then it's good✔ if it doesn't then throw it out. This how to know a good yeast. Enjoy and let me know how it goes. :)
