The way she's cutting the vegetables so fast made me a little nervous to watch, hoping she doesn't cut her hands. But from what I can see, she's a professional.
There is ugali all over southern Africa in different names and grains. We use mainly maize as well as sorghum which is what it is said we ate originally before maize was brought over here from the Americas by the white colonists who happened to have had contacts there.. In fact experts say sorghum is of the best nutritional content that a person could ever live on, compared to maize and wheat, I guess almost like injera. For ugali, the grains do not get milled finely like flour though. They retain a certain rough texture especially with sorghum. In South Africa we commonly call ugali "papa" which I'd say is basically an Afrikaans/ Dutch word which is "pap' meaning soft in my view.. In north Sotho and Setswana we call it "bogobe" with the "b" sounding like you are blowing air out through the lips and the "g" sounding as if one is clearing the throat mildly.. I'd love to hear what other fellow southern Africans have to say about this. I am no expert at all on the topic I confess.. I am merely following what I know as a southern African.. Pleasure.. Some clarity friend.., the word "papa" also means "father" or "daddy" in Sesotho though with a different tone.. It all depends on the context.. In passing, I love hearing you when you occasionally have to speak Amharic with those you come across when filming..
