As an italian i can say Cal is completely right about mixing the pasta with the sauce and cooking it a couple minutes with the bolognese... but remove the bay leaf afterwards because if you eat it apparently it’s slightly toxic

In Italy we actually do mix the pasta leaving it a bit undercooked with the sauce and adding the pasta water, which is gonna make the sauce tastier and glue it to the pasta because of the starch. Then finish cooking the pasta in the sauce for couple of minutes

13:25 Yes Cal, you do put the amount of sauce you want and then the pasta in the same pan, if you are doing it like you are that it is just for two people right there on the spot, then you put the pasta in the sauce pan and stir it together so the flavours combine, there even is a term for it, but I forgot what it's called. It's not a massive game changer tbf, but it is very good way of doing it.

In terms of how you would present the spaghetti bolognese, it really goes either way I have never had a problem with having it mixed in before it's on my plate

A bolognese is made with a base of onion, garlic, bacon, cellery, and carrots witch you cook for about 5-10 min. Before that you cook the meat and remove it from the pan. Then you add the meat back inn the pan. Add salt and pepper. Then you add whit wine so it cover the meat. Add a lid and let it cook for 30 min. Then you get rid of the lid and let the wine reduse. Then you add tined tomatoes and let it cook for another 30 min. After that you add pasta with some of the sauce to a frying pan and cook it for one person.

Resturants serve the sauce and pasta seperately because it is quicker and more efficient to have a pot of pasta a pot of sauce and then serve the two in a bowl. It would be a ton more work to individually cook the pasta in the sauce for every person but that's generally the better idea because then the pasta soaks up the sauce
