    My MIL’s neighbor gave us many mangoes from their tree. I thought I would end up freezing them, but no! I’m headed out for strawberries and Pomona’s Pectin. Thank you for the terrific idea. Your videos are inspirational. Thank you for encouraging us viewers!

    Thanks for demonstrating this recipe. Ive only been canning for 1 year and Pamona Pectin is the only pectin Ive used. Its so much better to taste the fruit rather than using so much sugar that the flavor gets lost, IMHO. I really enjoy your videos on canning. The voice over you had to do came out very well. 😊

    Carter, another great video! This Miami-born midwesterner is always excited about mango & anything, but mangoes and strawberries are a perfect combo. Thanks again for a fun, inspiring time - a few days late since we’re on the road and Wi-Fi is iffy out here in the West. Well worth my wait! 😊

    By the way, I saw a TH-cam post from Rachel at that 1870's Homestead and immediately thought of you. In the video she making canned lemon curd. Knowing that I love anything lemon, especially pie, I had to give it a try. AND MY GOODNESS, Carter - amazing!

    Thanks for the tip about altitude.
    I am in an area with buttes. Knowing their height I've always assumed I am over 3,000 ft. I'm not. Using the site you mentioned and my address I'm at 2,982 ft. ❤❤❤

    With pamona’s pectin you can reprocess if it doesn’t set.

    Hi Carter! I have been watching your channel and so glad I found you, love your makes sense to me canning! I have a question about Not your Mamas canning book, I have tried the Dijon mustard and it was yummy, I also am thinking of trying the tiki masala and the hummus in a jar have you made either of these recipes looking for your input. So far my husband and I have enjoyed a lot of your canning that I have made, so I would trust your judgement in consistency and flavor. I also want to try her corn stalk broth it sounds yummy. Thankyou 🎉

      Hey Beverly! I have made the hummus in a jar recipe from that cookbook. I actually filmed it twice, trying to get a product I liked. I never posted it because, as much as I love hummus, I couldn't find a single value-add in this one. I had really hoped that the sesame seeds would mean I could eliminate the half empty bottle of tahini that always ends up dying in my fridge. Nope. At least for my taste, tahini is still a necessary add. And, it still needed further "doctoring" too, I thought. I have looked at the tika masala a couple times. I love tika masala, but I'm not loving the look of the end result of this one. I will probably at some point make this one, but blend it smooth before canning and perhaps work on the seasonings a bit. I want to just be able to add a bit of coconut milk when it's time to serve. If you do try it, I would really like to know what you think of the flavor.

      Thankyou for your response Carter! Not going to waste my time on that hummus in a jar if it needs the tahini anyway, I am going to try the tiki Masala and let you know how it turns out! My husband and I started our keto journey together over a year now as well. So much easier doing it together, I would say we are 70% clean keto and the other 30 dirty it keeps us on track with keto slipping in a cheat now and then lol. It works for us! We also enjoy hero bread just heads up though I wouldn’t recommend the cheddar biscuits, I treated us with my points and nope didn’t enjoy those! I of course am going to eat them but will probably add melted butter and a lil garlic onto them for flavor. Looking forward to your next video! God bless you and David

Keto is definitely easier when the two of you are doing it together and accept that some personal tweaks make so much sense if they keep you on track. David has been struggling with keto for quite a bit lately and can't seem to get himself back on track. Hopefully soon! So glad you like the Hero bread. I love it. I'll definitely take a pass on the cheddar biscuits. Our favorites are the seeded bread and the tortillas. David loves the hamburger buns. I've gotten so used to eating burgers without buns, that the bun makes it too much food for me these days!

      Good question, Debbie! The short answer is something you know you'll use. Are you always buying pickled peppers at the store? Salsa? Jams and Jellies? Hot sauce? Canned chicken? Canned green beans? Chicken broth? Start with what you reach for all the time. From a "how to ease into the idea of canning food at home?", I think anything pickled is a good way to go because it's just so simple and only needs a stock pot that's deep enough to hold the jars, plus an inch of water over the lids.
