Disagree. There is no hard and fast rule regarding the preparation or making of Eto. The combination of unripe and ripe plantain, is dependant on how an individual wants his/her Eto to taste. So those with a preference for sweet tasting food, will add more ripe plantain. The cardinal rule however is that no matter what preferred, the Eto does not come out as wet and sticky, which is undesirable. Befe, your Eto, is perfect. You have been taught well and you have learnt well. Congrats.

There are three types. The common one is the Semi Ripe Plantain type. The yam type is for puberty celebration for some one or two tribes. The yam type is prepared for Toddlers, learning how to eat heavy food. The yam type you can use butter instead of red oil and that is also delicious. The PLANTAIN type uses Peanut paste or just roasted peanut. First grind pepper and onion and salt to taste, instantly mash the Hot plantain right from the pot, without lumps in the earthenware bowl with already grinded pepper paste., then allow to cool down. Then mix with the groundnut paste , next the Red Oil, finally Garnish. with, avocado pear and eggs. It's very yummy when the peanut is more. The PLANTAIN TYPE is more common and everyday meal. It's simple and easy to make food .. Just a little portion and you are full, this dish demands water for the whole day. The plantain or yam should be mashed hot, for better result. Then, after mashing alone to cool down to gain that Loose Texture( or feel) before adding groundnut paste and garnish.

there are various types of etoh.... yam, green plantain, ripe plantain, eddoes locally known as mankeni.... different tribes and the base they use....
