Jak'sho is so far from gold efficient without prio tank items its never worth buying in a build like that. That's the only thing I'll comment on but goodluck on your climb

What about situational items like anathama's into 1 ad/ap or botrk(if they have double health stackers). Black cleaver vs armor? Don't think Morde is under "Free"?
I personally never tried anathema, don't think it's so good for olaf,because i Don't see the champ as a frontlner he is more or less like darius he doesnt want to start the fight,but go in when enemies wasted their cooldowns on allies. Also morde with ignite, can kill olaf pre6 and if he gets ahead somehow he can survive/win olaf's all ins, but that's more common in low Elo.

i feel like olaf is so weak without hydra shouldnt i go hydra every game? its so good to snowball too so i can proxy and invade
Not really, i talked to activeforce(grandmaster jg olaf main) and six kings(grandmaster olaf top). They never do hydra no matter what, i reccomend you hydra into 3+melee or toplane tank matchup,but other than that you need stridebreaker for carrying potential,play both and see what works for You:D
