The neighbors sound like the kind of sociopaths who would trespass on your property deliberately and then injure themselves, then they'd sue you in court for their own careless criminality and lie straight to the court that you invited them over
It gets annoying hearing "And I seriously don't know what to do" and "If I were in your shoes" a lot. We get it, we know both those statements are true, that's why we're here.
Story 1: Stories like this are why i would never buy a house with a pool or get a pool installed. They attract the absolute worst people out there. Even with cameras, it didnt seem to deter them here. The husbands biggest mistake was showing the neighbours how to open it to 'retreive items'. You're just asking from them to tresspass at that point. At least they were start to rescind any 'permission' here, along with a registered letter and not outright accusing any neighbour of using the pool, but i think its pretty obvious on which neighbour it was. While you're at it, get a "no tresspassing, tresspassers will be prosecuted" sign too. Story 2: No way is the OP a jerk here. The parents are. The OP is 20, and adult, so if you want to go to that concert, that's up to you, not them. They are just intrusive jerks. If the OP is able, they should move out and limit contact with the parents. Story 3: Absolutely none of this is an over-reaction and i say the OP needs to 100% ban the in-laws here. They obvioulsy dont care about you, your rules or your household at all. I can relate to OP in Story 2 my parents were heavy Christians and were super nice when around other people but when not near other people they’re awful I was constantly being called a loser and a mistake whenever I made a small mistake and once I moved out I called them out and flipped them off before I shut the door

The thing is, they can order a card, and literally take your money if youre not careful. Ive had that happen to myself. I enlisted in the US Army at 17 and was shipped off. I had to make a joint account. I made it through basic with around 3k in my account. Within 2 months it was all gone. I found out my mom had been using my money while i was away in the military. So yeah, id get a new bank account they dont know about. Especially if theyre going to act that way when you spend your own hard earned money. Thats a dangerous situation. Anything with money is.
First Story: OP is in the right not to let them use their pool. They did not have permission to use it, only to go into the yard for lost balls. But since they abused that privilege, then they don’t deserve to set foot on OP’s property. Knowing those neighbors, they would sue OP the second one of them got hurt or worst in or near that pool.

OP needs to get a new phone line contract, one his parents aren't on and can't access, and on the same day OP should open a new account with a different bank that his parents don't bank with, then withdraw all his money from his old bank account and inquire about closing the old bank account (assuming they don't need his parent's permission to close the account), after that deposit all the money into the new account, and go into work to have them change his bank account details for his pay. Next, when OP's lease comes up, he could move into a new place and never let his parents know where he lives. Then he'd actually be independent, and his parents wouldn't be able to hold anything over his head.
