Stormbreaker is able to focus and enhance Thor's powers. Due to it being composed of Uru, the weapon is nigh-indestructible and able to withstand energy blasts created by the Infinity Stones. It is also able to channel dimensional energy and act as a Bifrost Bridge, which is shown when Thor teleports himself, Rocket Raccoon and Groot to Wakanda instantly.

Infinity stones are the result of breakdown of an unknown cosmic entity (which was most powerful ) .
But the dark energies are present before it broke down .
How can stormbreaker posses dark energy when it was molten from the heart of dying star n given shape by eitri. Movie didn't show any enchantments or any mention regarding use of dark energies in the process.
And in Avengers infinity war clearly mentioned that Infinity stones are result of big bang not unknown cosmic entity. i guess u r confusing it with comics buddy .

The stormbreaker possess some sort of dark energy (dark matter) and infinity stones on the other hand are pure energy(quoted from avengers 1) . So infinity stones cannot deal with dark energy (can not be destroyed using pure energy ) !!!!! And which ever stone thanos uses its being highlighted and when thor throws stormbreaker , whole of the gauntlet was flashing . So its clear he was using all 6 of them. THOR overpowers THANOS
As we know thor is God and king of asgaurd he has amount ful of powers in him and he needs a weapon to chanelise it. I am not sure that stormbreaker does consists of dark energy/matter but one thing i know i by the Infinity war that its metal is made up of heart of dying star which is the core of the star and thats the reason why they needed to reignite n all. Coming to the Infinity stones , they did glow but he didn't used it full potential of it ands that the reason y thor was successful in stabing thanos. If thanos would have used the full potential of his gautlet his gautlet mi8 get danaged before he could use it for hi sole purpose as we have seen in the last of movie what happens if he used all the stones at a time .

The real reasons are because this Thor is not the same Thor before Ragnarok. After Ragnarok and the early events of infinity war, he "died and reborn" numerous times to higher states of self awareness and power level. He is the MCU version of Rune King Thor which is almost on par with Thanos and his infinity gems in terms of pure power level but Thanos has more abilities than Thor who only has largely destructive attacks.
Secondly The dwarf king who built Thanos' gauntlet, know the power of metal required to hold and absorb all the energies from the six gems, Thor's stormbreaker is built with that in mind plus its of the supreme godly metal maybe on par with Hindu god Shiva's Trident. Suffice to say, the stormbreaker like the Gauntlet, is designed to absorb the raw energies coming from all the six gems. Thanos does not know that and fire a pure energy beam from the gems which get absorbed by the stormbreaker, making it much more powerful than before and defeated Thanos.
Thanos might have won if he uses all gems in a different way like changing the structure of the axe using reality gem before it reaches him, mind control thor, time freeze the axe, etc.
