    Brilliant, I’m new to this cureing style cooking, I’ve tried a version of your bacon using belly pork , I’ve got the Christmas ham recipe you did in the fridge ready to cook tomorrow, keep it up bud looking forward to trying more of your recipe 🤘🏻😎🤘🏻

    Looks amazing. I just made a Brasaola in a similar way with drying bag too. But I did not do trusk and did not do the last stage of equalization. Indeed it was a bit uneven. Next time I will follow this recipe and technique for sure.
    I really appreciate your videos which are detailed and percise but also simple. Wish I would work as clean as you.

    With sealing move the bag out a little to form a double seal. Plastic welding isn't better with more heat.

    great video thank you, but don't ditch the beef fat, once you have a few kilos cook it down and make tallow which is much in demand right now and is quite a good money earner if your in business.

      Thanks. for larger quantities yes but for that amount its not really worth it.
