    but its not true that stultifies can lower or increase the ageing of a wine

    So out of these three categories which one has absolutely no added sulfites?

      Sulfur is natural [found in Nature]; so all 3 certifications allow for adding some sulfur, either in the vineyard and/or winemaking process.
      Not only will each and every winery make choices on adding sulfur or not; each vintage may require wineries to address problems where sulfur is the best way to address the problem(s). Either in the vineyard [such as mold] and/or in the winemaking process [such as w/bacteria and/or oxidation].
