- How to prepare bas saaru
Ingredients:
• Toor dal 150 gm
• Water
• Cabbage 1/2 kg
• Tomato 2 no. (small)
• Salt to taste
• Tamarind
• Oil 2 tsp
• Cumin 1 tsp
• Pepper 1/2 tsp
• Garlic cloves 10-12 no.
• Onion 2 no.
• Mustard 1/2 tsp
• Curry leaf 10-30 no.
• Grated coconut 10-12 tsp
• Sambar powder 3 tsp
• Coriander leaf
• Chana dal 1 tsp
• Urad dal 1 tsp
• Red chilli 4-5 no.
Method:
• Take a pressure cooker
• Add the following:
○ Toor dal
○ Water 1 liter
○ Cabbage (cleaned and chopped)
○ Tomato 2 no. (small)
○ Salt to taste
• Cook for 1 whistle
• Soak tamarind in water and keep it aside
• Once dal, tomato and cabbage are cooked, keep tomato and 2 tsp of dal aside
• Separate water from cooked dal and cabbage. Keep water aside.
• For seasoning, add the following to a pan:
○ Oil 2 tsp
○ Cumin 1/2 tsp
○ Pepper 1/2 tsp
○ Garlic cloves 5-6 no.
○ Onion 1/2 no.
• Fry until onion tuns red. Keep it aside.
• In the same pan, add oil (2 tsp)
• Mustard 1/2 tsp. Let it sputter.
• Add Cumin 1/2 tsp
• Add Curry leaf 10-15 no.
• Add for a minute or two
• For the masala, take the following in a mixer jar.
○ Grated coconut 4-5 tsp
○ Fried cumin, pepper, garlic, onion
○ Onion 1/2 no (small)
○ Garlic cloves 4-5 no.
○ Add water
• Grind it to a fine paste.
• To add same paste:
○ Add soaked tamarind.
○ Add cooked tomato and dal that was kept aside.
○ Grind it to a fine paste.
• Add masala to seasoning.
• Add sambar powder
• Add the strained water from cooked cabbage and dal that was kept aside
• Add salt if required
• Once it starts to boil, cook for 5-6 minutes.
• Add coriander leaf.
• For cabbage fry/palya:
○ Set a pan on stove.
○ Once the pan is hot, add oil (3-4 tsp)
○ Add mustard seeds 1/2 tsp. Let it sputter.
○ Add chana dal 1 tsp
○ Add urad dal 1 tsp
○ Fry it till cooked
○ Add curry leaf 10-25 no.
○ Add red chilli 4-5 no.
○ Add onion 1/2 no.
○ Fry it till cooked.
○ Add cooked cabbage and dal.
○ Grated coconut 6-8 tsp.
○ Cook for 3-5 minutes.
○ Add coriander.
