For boiling:
Soaked bengal gram -2 cups
Cinnamon stick -1 inch
Bay leave -1
Black cardamom -1
Salt -1/2 tbsp
Water - 4 cups
For Curry:
Green cardamom - 4
Mace - 1
Bay leave -1
Black pepper - 12
Cumin seeds - 1 tsp
Ginger paste - 1 tbsp
Garlic - 1.5 tbsp
Green chilli - 4
Onion -1 cup
Tomato paste -1 cup
Turmeric powder - 1 tsp
Red chilli powder -1 tbsp
Coriander powder -1 tbsp
Cumin powder -1.5 tbsp
Garam masala -1/2 tsp
Coriander leaves -1/4 cup
Salt to taste
Cooking oil -1/4 cup
For Tadka:
Ghee -2 tbsp
Garlic - 1 tbsp
Green chilli - 2 to 3

Hamare yahan aur bhi 2 types ka kala chana banta hai - ek may pyaz-lasun-tamatar nahi dalta. Imli-gud-dessicated coconut, dry masale & dalchini, lavang, elaichi dalti hai. Tel bhi acche se dalta hai.
Yeh Gujarati way hai.
2nd recipe Maharashtra ki hai. Yahan usey usal kehtey hain. Tel, masala, spicy. Aap ki tarah se he banate hain, bas usme Marathi goda masala & nariyal ka khees dalte hain. Generally tamatar nahi dalta ya bahut kam dalta hai. Usko pav ke sath khate Hain as a street food.
3rd - quick snack. Chaney boil kar le. Finely chopped fresh coriander leaves, onions, tomatoes, green chillies, pepper powder/chat masala, lemon juice daal kar bhel jaisa chatpata snack banaiye. Bacchon ke tiffin may bhi de sakte hain. Sath may boiled beetroot slices with chat masala de dijiye.

Hello Mam, I always follow you and am in love with all of your recipes.
But I have one doubt..whenever I add 2 or more than 2 tomatoes, no matter how much I am cooking the masala, the gravy turns a bit sour (khatta).
Is it how it's supposed to be?
