The ham is slowly stewed in a mixture of brown sugar, pineapple juice, a can of Sprite, peppercorns, dried oregano, bay leaf, a few pieces of cloves and a splash of rhum..cook the ham until the liquid mixture reduces to a syrupy consistency..Since the ham is already cooked, you may want to remove it from the cooking pan as prolonged cooking would harden the ham and dry it out..remove the ham instead, halfway during the cooking process, and reduce the liquid to a syrupy sauce..slice the ham, arrange on a platter, pour the sauce over and garnish the ham with pineapple slices and chopped parsley..

It's "seasonal" because it's usually not practical to buy it if there's no occasion. Things are cheaper here, based on foreigners' POV. But most regular Pinoys won't really agree. The cheese used to be bigger but they made it smaller now so more people can afford it. The same with the ham. The normal processed ham, we can buy on a regular bases. But cured ham like this? No. So it's become a "seasonal" thing as well. It used to be bigger also....The fruit salad would be better if chilled first

For me, since the fiesta ham is already glazed i prefer it to be pan fried that’s good with rice and great for making a sandwich. 11:30 this gave me an idea… i think i’ll try this on the pear shaped ham 😁 The macaroni salad i prepare for christmas is closer to you but instead of tuna i put chicken, pineapple and pickle relish with other yummy ingredients. My fruit salad is exclusively fruits… hahaha… that’s why when i learned that others put macaroni and cheese on theirs i was so surprised. 😆 Sometimes i also include fresh fruits like shredded young coconut meat, apple and grapes for added texture. The other dishes we serve for noche bueana are white spaghetti(since we already had the red one a couple of times) or carbonara together with sliced bread(plain white bread) filled with cheese pimiento or sandwich spread and more desserts like kakanin, graham crema de fruta or mango graham. Oh and i also associate roasted chestnuts with the holiday season because this is the only time that it’s very abundant at the public market. Hehe… I think that’s it…🤔 Media Noche dishes is a bit different. For me it’s one of the best time to bring out some alcohol and spirits. Hahaha

i do the fruit salad a lot, i usually drain the fruit for a few hours first before i mix the cream cheese and condense milk, so it's not watery consistency, and yes it's more delicious when cold so put it in the refrigerator first lol! thank you ladies .
