Have you noticed how wheat resembles the overgrown grass, that grows is your'e garden, or i should say that growa in my garden lol, like a miniture version, like crab apples conpared to commercial apples... maybe that grass is it's relative?
We got about 5 Lbs of wheat out of about 100 sqft last year, so roughly 1/2 Lbs per 10 sqft. It was a mediocre harvest. I think you might be able to get 5/8 to maybe even 3/4 Lb / 10 sqft with a really blessed harvest.

I think people used to bind the sheaves with one of the grain stems. Seems like that would be easier and simpler than cutting off twine
We bind ours with a few of the grain stalks. It's faster and easier and you don't need to hunt down and waste twine.
