Cy is a good man for all he shares with the community. I have a question why do you suppose that he puts the liquid enzymes in the kit ? Curious being the 2lbs of malted rye and 2 lbs of malted barley should have enough diastatic power to convert the corn and themselves. Don't get me wrong this is a bad ass kit and if you don't use the enzymes now you have em for future use with another run of whatever. Like you mentioned I have let It sit over night and by the time I get back to it the mash would seem to be fully converted and super thin . Do you believe that the enzymes are necessary? Or do you think that they could be saved for a different batch where you don't have as much DP available ?🤔 Either way that is a great kit with all the information all printed out plus the math ,milling and portioning done 👍sweet.
Cyrus said, in his video, that it will convert itself, and that he will do another video showing that method. I also believe it has instructive both methods. I just received my kit, so I'll check later today.
I believe the enzymes are more of a safety net or a 2nd option there is enough malt to convert everything it was pretty thin before I added the alpha amylase in you definitely could save it as long as your conversion with the malt is successful it's also usually easier using High temp amylase it's not as temperature sensitive and doesn't take as long in my opinion But I loved this grain kit I highly recommend it and the fact it's malted rye always makes the flavor profile better to me...Shine On
@@ScottBryant-wi7gb yes it was 190°f it thins the mash out some but the enzymes get denatured if you were to use the malt to convert your starches you would have to be cooled down first

If you have a brew shop local that's awesome A lot of people don't and this kit is great for them also for people new to all grain because it comes with everything you need besides water
Would you do this the same as fermenting on the grain in your fermenter instead of using the boiler just pour your hot water straight in on the grain ??
Yes I would that's my preferred way of doing all grains but for the purpose of this video I went by STC's instructions And I prefer to do it in my mash barrel You don't have to worry about scorching grains. You just add rolling boiling water, To your Mash barrel, stir It up add your high temperature enzymes. Let it sit for an hour and you're ready to rock top it off with the rest. Of Your cold water pull a temperature add Gluco amylase and pitch your yeast

When you added the malted grains, would it have killed the enzyme at that high cook temp?

Is that an on grain fermentation?
Yes it is I always do on the grain fermentation
Kit is expensive for the amount you get. Never bought it but I'm sure it's good . Get double ingredients for alot cheaper in brew shops
