I’ve been playing drums for years, pretty much have a solid grasp on the common rolls (single, double, 5 and 6) but I have wondered for a long time what the benefit of using them is when they can all be accomplished by playing singles with your leading hand.

Doubles add versatility to the sound. An example (although not ideal) is the video. The guy playing has pretty sloppy doubles, you could never recreate that sound with single strokes ever. Also you will need doubles when you separate your hands anyway like in a paradiddle around the groove.
