When I was a child I remember this out door cooking with the firewood in rural Jamaica. I’m going to try cooking some rice like this. We use coconut milk and beans or peas to cook some our rice dishes
I remember those days too. That food be the best food I ever tasted. Every Saturday we go to the beach get fresh crab, fish etc and they would cook it right there
I was in Kampala Uganda in year 2000 that was a short working experience but that was most rewarding experience to worked with Ugandans, very friendly English speaking and always happy and very cheerful, that experience was very memorable and till now I miss Kampala

For my rice i use fresh coconut milk I add green scotch bonnet pepper not cut just to add flavor careful not to burst it add thyme, red onion,scallions,garlic and allspice😋

Wow! That's nice. Here we don't use coconut milk but sometimes we use palm oil
