I've been lucky enough not to have run into this situation yet but that generally because I use dried herbs in my oils to infuse and do the cold method where I let the herbs and oils sit for 2-6 weeks to infuse. I have heard friends who use fresh herbs or semi fresh herbs run into the rot smell more often because the water from the fresh/semi fresh turns the oil rancid. I also generally use olive oil for cooking spells, making small batches of the oil so I go through the oils a lot faster. Hope that helps.
