Dry Ingredients:
• 1 1/2 cup light buckwheat flour
• 1/4 tsp cinnamon
• 1/2 tsp baking soda (combined with 1/4 tsp cream of tartar)
• 1/8 tsp pink salt
Wet Ingredients:
• 1/4 cup ghee
• 1/4 cup coconut oil
• 2 tbsp. monk fruit powder (or to taste)
• 1/2 tsp alcohol-free vanilla extract
• 1/8 tsp pink salt
• 1/2 tsp lemon juice
Add-ins:
• 1/3 cup homemade sugar-free chocolate chunks
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a bowl, combine buckwheat flour, cinnamon, baking soda, cream of tartar, and pink salt.
3. In a separate bowl, blend together ghee, coconut oil, monk fruit powder, vanilla extract, and salt. Chill for 10-15 minutes. Blend again.
4. Gradually mix the wet ingredients with the dry ingredients, stirring well.
5. Add a dash more baking soda and mix in lemon juice.
6. Fold in homemade sugar-free chocolate chunks.
7. Scoop dough onto a lined baking sheet, flatten slightly, and bake for 12-15 minutes or until golden brown.
8. Let the cookies cool and enjoy!
