When we make Mississippi pot roast I don't use the peppers, I use the brine that they come in. My husband and son eat the pepperoncini on sandwiches typically. When they're out they say time for roast and I use the whole jar. Not sure if you could do that with the canning? You get the flavor without the pepper. for me its perfect, I cant handle spice anymore. And if they want more spice they open another jar. I love those little jars, they're so cute. I have some with cranberry jalapeno sauce and hot pepper jelly for my husband in them.
I watched your video last night and knew immediately that I wanted to make this. Then there was the thought about where to find Hatch pepper. Not something I would find in the US upper midwest. BUT! Found some today at my grocery store, for $.99 lb. I am so happy! Tomorrow will be roasting and canning. Thanks, Linda. I love your videos.

I have used Rada knives since the 80’s . Yes I am old! I absolutely love them! Try the granny knife and a must is the tomato knife! I want to can green chili’s with out vinegar, like the kind in the small cans from the store. I have to find a recipe .
I had a food mill similar to your new one and I hated it. But yours seems to work better. Where did you get it? Also, what kind of peppers were they? Hatch pepper?
When you open a jar, add some of your canned spicy pork, warm and serve with fried potatoes, eggs and flour tortillas for a perfect New Mexican breakfast!
Linda, I just love you and your garden and your palate! Wanted to order that lil cutie canner and it’s the same price I paid for my 921 18 months ago! 🤯 I’d love to grow peppers and make yummy salsa but my esophagus won’t let me. Yours must be made of steel. 😂
I like the way recipe is developed. Question. I don't particularly like smooth, can I chop the peppers after all is clean and the can? Plus, I have a 921 All American. I've been thinking about getting the smaller one as well. Do the times remain the same as the 921?
Times are the same, yes. You will LOVE a smaller All American. I have 2 of the 15's and one of the 10. I find these sizes I use much more often and they don't take a muscle-man to manage. haha Yes, you can use chopped peppers and all, then can. Have a fabulous time canning!!
Just got my order of 35 pounds of hatch chili's from Freddy's for 99 cents a pound. Plus since I got a box I got 10% off. Going to can just the roasted skinned hatch chilies. Putting mine in 4 Oz. Jars. I already bought 16 pounds on Thursday also. Should have enough for a while.
Help !!!! just used my All American pressure canner to can sweet corn mine fits 16 wide mouth pints but realized this morning watching a video that my bottom layer of jars were covered with water when I put them in and processed them. Per the video jars should not be covered. I put 3 inches of water like the book said but if the bottom jars were cover are they safe to eat?

Can never get the roasted hatch chilies to peel that nicely. Mine always come off skin in pieces.

How long did you process them for? I’m definitely going to can some chilies but think I’ll do some of this too
What kind of chiles are in the little cans of diced green chiles? This looks great, but I don't think my picky son would like it 😒
