Most of this "performance" is pre-recorded. See 5:56 for instance. Hannes put a lot of work into arranging that set upfront and once he started the playback all he needs to to "live" is twiddle some knobs on the synths and firing some samples randomly along the way. Claps and other one-shots that are not really time-critical, just some glitter on top. That way, it's more the safe way of performing. 90% is there already.

The whole playback comes from the laptop I guess.
Yes of course. Assume Ableton is sending everything out and he's just tweaking knobs and paying a bit of like stuff on top.
Why the laptop? that screws everithing, how do I know all sounds are not coming from computer?
He IS running a pre-recorded arrangement and then adds some tiny bits on top while the pre-programmed playback runs. The moog on the left is triggered by MIDI, I mean the laptop tells the synth when it plays which notes and Hannes is then modulating the sound timbre a little bit. That way he can be sure that his arrangement plays exactly as he programmed it upfront. The safe way of performing.
