Your definitions for sin, cos and tan are good. They have to been defined from the beginning in mathematics. I think other definitions are wrong because they don't satisfy the necessary and sufficient conditions Thank you for your detail explanation.
P/H is the definition of sin(x) where x is the angle for which P is perpendicular (aka opposite in some textbooks) and H is the hypotenuse of the right-angled triangle, so, in reality, P/H does not come from sin(x), sin(x) comes from P/H. P/H is the core/base/main thing here, P/H is used to tell what sin(x) is, not the other way around
