The Recipe: serves 4
Ingredients:
6 good quality sausages
oil
6 banana shallots or 1 onion, diced
20 new potatoes, precooked (or tinned) and cut in half
1 red pepper, diced
1 green pepper, diced
1 can dry or med dry cider
salt & pepper
2 heaped teaspoons wholegrain mustard
2 teaspoons cornflour, mixed with a little COLD water (hot water will not work)
Directions:
Fry off the sausages until browned and mostly cooked through.
Remove from the pan & add a little oil.
Fry the onion till golden, then add the potatoes and fry them until lightly coloured.
Add in the peppers and cook for a few minutes.
Meanwhile chop the sausages into bite sized chunks.
Pour in the cider.
Season with salt, pepper and mustard and tip the sausage chunks back in, nestling them down in the sauce to finish cooking.
Mix the cornflour & water
