Great video. After creating the VPC peering, the route tables are updated with the peering connection in both the VPCs. The subnet ranges of the both the VPCs where the Instances reside have to be whitelisted in the security groups of demo & valaxy servers, right? Upon the whitelist only, the two server can connect to each other. Please Correct me if I am wrong.

What I'm missing from this video is how the VM knows how to reach the other subnet. I assume the packet is first 'sent' to the default gateway which then does the routing, but that should be clarified.

Not required! When you add the entry on the route table, it allows traffic to pass from VPA A VPC B and vice versa
